Take your favorite biscuit recipe. Roll out, use your cookie cutter of choice. Cut shapes. Take cookie and roll sides threw a bowl of cinnamon/sugar. Place in cookie sheet. I take my thumb and smooch down in middle in one direction then smooch down in the other to make a nice pocket in centre.
