Pork lion roast & a Cast Iron Dutch Oven Pork rub: 1TSP paprika 1TBSP brown sugar 1TSP garlic powder 1/2TSP cayenne 1/2TSP onion powder 1/2 TSP dried thyme 1/2 TSP dried rosemary salt and fresh ground pepper, to taste Mix all together well. Bake covered 325 about 3-5hours depending on the size of your roast. I bake uncovered last 30 minutes or so. Gives the top a nice crisp. Take out of pan and slice.
Dont get rid of all that goodness at the bottom of the pan, skim out as much fat as possible. Put on burner turn up heat, I thickening this with a flour/water mixture.Made a side of green beans and served with some apple sauce. I prefer cranberries with this but it’s nice to change it up from time to time. How do you eat your roast pork?
