Wanted to try out this feta and tomato thing everyones been making. Well you know us we like lots of color and flavor. We’ve added lots of good stuff to it!

2Pints of baby Tomatoes (we like the mixed ones)
half small white onions diced
half small red onion diced
6-8 garlic cloves
5-8 whole baby mushrooms
few sprigs of thyme
fresh rosemary
fresh cilantro
fresh basil (we were out!)
Block of feta
salt & pepper
half bag of cooked spiral noodles is what we used
1/2CUP olive oil

These are becoming a favorite around here! They are great with any kinda of open shellfish.

10-12 large Mussels
2CUPS cooked rice vermicelli noodles
1TSP each of Sriracha
Garlic Chili Sauce
Sweet chili sauce
lime juice
Hoisin sauce
sesame oil
fish sauce & Oyster sauce
2-3 thai Chili’s (optional)
1/4CUP green onions sliced
Sliced green onions for garnish (optional)

Put everything in a bowl and mix well.

Baked 350degrees roughly 12-15minutes. Depending on your oven!

Top with some sliced green onion, more chilis and chopped cilantro if you like.

It was cold last Sunday, it was a great day to make a couple of soups.

1 large Chicken Breasts seasoned with salt and pepper (bone in, skin on)
half large Onions diced
3 Celery Stalks sliced
3 Carrots sliced
1 large Parsnip sliced
1 small Turnip sliced
3-4 Potatoes (depending on size)
1 CUP of peas (frozen or canned) couple things of Fresh Thyme
piece of Fresh Rosemary
2 TBSP Summer Savory
2-3 bay leaves
Salt and Pepper to taste
Oil and Butter for pot
6-8 cups water (you can use some stock if you prefer but we don’t find you need it)

Were are liking our new induction burner! Get your pan nice and hot. We like to add some butter and oil to bottom of the pan. Add in your chicken breast skin side down. Brown chicken on all sides. Once this is done the bottom of your pot should start to get some color and flavor on it. We then add in all the veggies in (minus potatoes) and cook for 2-3 pieces stirring very well. Then add in your water little at a time. All while stirring and getting all the bits removed from bottom of your pan.

Once chicken and veggies are covered with water, we add in the potatoes, salt, pepper and all the herbs. Bring to boil, then lower heat and simmer.

Cook til veggies are done. Chicken will also be done at this time. Take out chicken. Discard skin and bones, cut chicken up and put back in soup along with the peas.

Depending on your taste you may or may not want more salt and pepper! We enjoy this soup. We have it at least twice a month. My kids prefer the dumplings in it, as do I. Hope your family enjoys it as much as we do!

Coconut Chicken Soup

We’ve been playing with this soup for a while and were pretty happy with the flavors now!!

1 large chicken breast (bone in)
salt pepper for chicken
1 onion sliced
3 stalks celery sliced
2-3 carrots sliced
1/2CUP cut up turnip (you can omit but we find it adds lots of flavor feel free to substitute for another veg)
2inch slice of ginger to throw in pot
2-3TBSP each diced garlic & green onion
1L Campbells Thai Broth
1 can coconut milk
2TBSP salt
1TBSP white pepper
half package cooked rice vermicelli noodles
1TBSP vegetable oil
handful chopped cilantro

Get your pot nice and hot, add your oil. Put your seasoned chicken breast in the pan. We normally put skin down first but didn’t this time. You want to get the chicken nicely browned on all sides. The bottom of the pan should start to get some color and flavor on it.

Baked Chicken Fajitas

We have only made these a couple times, they are always enjoyed. If your looking for something different you should try them out.

3 boneless, skinless chicken breasts cut into strips (can use thighs if you want as well)
1 green pepper sliced
1 red pepper sliced
1 jalapeno sliced
half large Spanish onion sliced
few garlic cloves sliced (we always use a lot of garlic in anything we make!)
Can of Diced Tomatoes with spices
Can of Tomato Paste
10 small flour tortillas
roughly 2CUPS grated mozzarella
2TBSP of taco spice
salt pepper to taste
little oil of your choice for your pan

We like to get the pan nice and hot, add in olive oil, chicken and taco spice. Cook medium heat til chicken in partially cooked.

We then add in the onions, garlic salt and pepper. Cook til chicken in done and onions are soft.

Peppers and Jalapeno doesn’t take to look long to cook to you can add them now and cook for a couple minutes until tender. Then you can add in your can of tomatoes and can of tomato paste. Stir cook down for a couple of minutes.
