1 medium cabbage, finely chopped
(Purple or green or both cabbage is fine)
3 medium carrots, peeled and shredded/julienned
1/2CUP green onion cut
Sauce:
1CUP mayo
2TBSP apple cider vinegar or more to taste
2TBSP Dijon mustard
1TSP celery seeds
1/4TSP sea salt
1/4TSP black pepper

This recipe is great. I didn’t have that much cabbage left so I didn’t make as big as batch and used a little less ingredients then listed. So depending on how much veg you use. You may want to put less or more sauce in.

Another thing I threw together with things around the house! Tim said it tasted better then my Shepard’s Pie. It was family approved and we will definitely make again!

Add about 1/3CUP flour, stir, mix well. Cook couple minutes.

You can either use 2 cups chicken stock or 2 cups water with a bouillon. Add in bring heat up. Stir til thickened.

One thing I can’t stand is soggy nachos!! They aren’t suppose to be soggy. If your using olives they have to be squeezed really well of their water. Tomatoes are excellent on nachos but don’t cook them on the nachos. Throw some optop when serving! They will make the chip soggy fast. I have to make a big batch of nachos cause my family loves them. I do 3 layers. Everything on each layer. Bake in a preheated oven 425F for about 10minutes. We serve sour cream and salsa on the side. Once in a while will have some guacamole too.
I bake these in individual cast iron skillets so everyone gets to make/have their own nachos.

I used 8 cut up whole wheat Pitas.
1TSP each of garlic powder, onion powder, cayenne, basil, italian spice, crushed chilis, & parsley. I used some fresh rosemary, thyme, & sage.
You can change this up any way you like. They taste great with a variety of different spices.

I wanted to use some avacado oil this time. I’ll definitely do it again! Sprinkle oil all around. Sprinkle spices (mixed all together in bowl) all around. I used my hands to mix everything really well on all sides.

Bake 425 F for 8-10minutes

Teriyaki Chicken

This is an excellent teriyaki sauce! Winter break all done, the kiddos finally back to school tomorrow, Yay!!
1/2CUP soya sauce
1/4CUP brown sugar
1 1/2 teaspoons fresh ginger, minced or chopped
1TSP garlic, minced or chopped
1TBSP honey
1TSP sesame oil
3TBSP mirin (or sherry with a tad bit of sugar)
This is a whole chicken I cut up. It’s cheaper that way. I normally freeze my sauce with my meats.
I made the above sauce. Mixed it all in a large freezer bag til sauce is mixed well. Add your chicken. Seal, turning bag all around so chicken gets coated well. Freeze. And or marinate for 4-8hours in fridge. If freezing thaw before cooking. Place in your pan you want to bake it in, make sure you get all the sauce out of the bag too. I used my favorite cast iron pan!

Bake uncovered 350 about 45minutes to an hour. Basting every 15minutes.

You can thicken this with a cornstarch/water mixture. Sometimes we we do. We didn’t today.
