Potato & Leek Soup Leave a Comment / Soups / By Amanda and Tim / December 22, 2019 February 9, 20203 large leeks, cleaned very well, chopped3 cloves garlic4-6 large potatoes, roughly chopped 8 cups chicken or vegetable broth1 onion2 bay leaves3 sprigs fresh thyme or dried1 teaspoon salt1/4 teaspoon ground black pepper1 cup half & halfHalf cup grated cheese I used provoloneI throw everything in a dutch oven but the milk & cheese. Bring to boil, slightly cover, light boil til everything is softened. I take my emersion blender and blend it all including bay leaves. Once blended nicely I add the cream (or half & half), and stir in the cheese.My family loves this soup! We have the PC Choice brand but this one is just as good.
Almond Chocolate Peanut Butter Balls Leave a Comment / Desserts / By Amanda and Tim / December 22, 2019 January 18, 20202CUPS peanut butter1 1/2CUPS confectioner’s sugar4TBSP butter softened1/2TSP vanilla extract1/4TSP salt1CUP rice krispies22 Hershey’s almond chocolate bar (Halloween size)1TSP vegetable oilTake the first 5 ingredients and mix together well. Once mixed, mix in the rice krispies in. Make balls with the dough. I like to throw outside for a few minutes to harden them up. But you can put them on fridge or freezer til chocolate is ready. I find they work best in the chocolate when cold.I made a double broiler for the chocolate and oil. I use a fork to turn the balls in the chocolate and to take them out. Lay out separate on non stick sheet. Let chocolate harden. These never last, I always make double batch.Were working with chocolate today

Over double broiler. Melt chocolate and butterscotch chips.Once melted mix chocolate mixture over chowmein.Drop by Tablespoons onto a non stick sheet.Wait til chocolate hardens, then dig inWorking with lots of chocolate today!

Semi sweet chocolate is best but you can use any. Melt. I use a fork to turn marshmallows around in the chocolate and to take out. I sprinkle a little bit of Christmas sprinkles on top.I use non stick sheets, silicone works and or parchment paper. Let chocolate harden.Everyone always goes back for a second! Simple, cheap and just tastes great. We always make around Christmas.Worked with chocolate today
