Jalapeno Popper Spaghetti
2TBSP canola oil
1 onion diced
1TBSP minced garlic
1/2TSP salt
1/2TSP ground black pepper
3 jalapeños, diced (remove seeds if you want less heat)
3TBSP flour
1CUP milk
4 ounces cream cheese (divided into chunks)
Package of spaghetti
2 cups shredded cheddar
2 jalapeños

I pan fry up the bacon in some oil til browned then add the garlic, onions, jalapenos, salt & pepper. Cook til veggies softened. Add flour mix well. Cook flour couple minutes. Bring heat up to high heat, add milk. Stirring constantly til thickened. Lower heat and add in cheeses. Mix til all melted in.
Lucky yes bacon is coming , relax lol
Chicken Soup with Gnocchi
Left over plate has Portuguese chicken cut, cooked carrots, cooked squash with skin, cooked corn and red & White onions.
I also have my left over gravy pan full of bits and flavour I don’t want to get rid of. So put that pan over high heat, add couple cups of water to pick up all that goodness.

Cinnamon Apple Rings
3 to 4 large Gala apples
1CUP all-purpose flour
1/4TSP baking powder
2TBSP sugar
1/4TSP teaspoon salt
1/4TSP cinnamon
1 large egg, beaten
1 cup buttermilk or milk
Vegetable oil, for frying
Cinnamon Sugar Topping
1/3CUP sugar
2TSP cinnamon
In a bowl, add the flour, baking powder, sugar, salt and 2TSP cinnamon. Set aside.
In a small bowl, combine the egg and buttermilk/milk and mix well.
In a third dish, mix the remaining 1/3CUP sugar and 2TSP of cinnamon and reserve for topping.
Slice apples into 1/4-inch slices. I use a stainless steel shot glass to cut the holes/center/cores out. Pat the apple rings dry with a paper towel to remove excess moisture.
Over medium-high heat, heat the vegetable oil in a frying pan to 350 F.
As the oil heats, combine the flour mixture and the buttermilk mixture together into the batter, mixing well to remove any lumps.
Dip the apple rings, one at a time, into the batter. Tap apple rings against the side of the bowl to remove any excess batter.
Gently place the rings in the hot oil and fry in small batches, turning so that they brown on both sides.
Once the apple rings are golden and crispy, transfer to a paper towel-lined plate to remove excess oil.
Dip each apple ring into the cinnamon sugar and coat evenly. Place on a wire cooling rack – serve quickly
