How do you like your roast chicken? What vegetables do you serve with your dinner? Chicken Onions, celery, carrots, turnip, parsnip, garlic. You can really use any any Vegetables you prefer. I like to cut big chunks with vegetables. Place chicken in Dutch oven and fill all the spots around it with your vegetables. I add about 1 cup of water. I top with some salt, pepper, rosemary & thyme. Cover. Bake 350 for just over an hour and then uncovered for a bit longer to get a color on your turkey.Once done take everything out and make a gravy with the droppings. I thicken this with a water/flour mixture. Serve with your favorite mashed taters and cranberry sauce
