Baked Cornish Hens Dinner with all the fixings Leave a Comment / Poultry / By Amanda and Tim / December 11, 2019 February 10, 2020Peek a booThis was fun and yummy! 3 Cornish hens White & Sweet PotatoesParsnipCarrotsAcorn Squash, turnipRed & White OnionCelery & garlicSage, thyme, rosemary, garlic powder salt/pepperStuffing BaconI kept the onions and white potatoes whole. I cut the squash in 3 discs, most carrots I kept whole some I cut in half. Sweet potato I cut up and parsnips left whole. Cut turnip.I get a big bowl throw in all the Vegetables along with hens. Add butter, and oil. Along with all the spices. Get in there with your hands and mix well until everything is coated nicely. I use my cast iron pizza pan. Put the 3 hens down then the 3 big pieces of squash down. I make 3 big stuffing balls to sit in the squash discs. Then with the remaining of room start stacking and placing on the vegetables on the pan. Sticking parsnips, carrots and or celery inside the hens as well. Fill in all the spots. With left over stuffing I also stuff some in here and there, wherever I can find room lol. What next you say?!Bacon, bacon, load that bacon on! You know it’s going to be delicious now heheHe doesn’t get to get this close often… but just sometimes I allow it lol.Cover bake 400 for an hour and half. I made a pan gravy & homemade cranberry sauce. Lucky didn’t leave my side for this recipe lol
