This dish is so versatile you can literally throw in any Vegetables and it will be good. The vegetables and sausages are always changing so the flavours are always new which makes it an exciting dish.I like to take a big bowl. Throw everything in there. Your sausages, vegetables. I used asparagus, mushrooms, onions, peppers,garic & squash. Cut stuff into bigger pieces/chunks. Add some vegetable oil. Rosemary, oregano, Italian spice, crushed chilis (optional). Mix it all til well incorporated.I then pour it all into my cast iron frying pan. Foil and bake 350 for about 45 minutes to an hour. I do stir half way threw. For the last 15 minutes I cook with foil off.
