Then add your flour mixture to your butter sugar. Mix well. Then add in the raisins & oatmeal. Mix til combined.
I like to use a TBSP ice cream scoop but a TBSP works just fine as well.
Bake in preheated 350F oven. 10-12minutes. Remove from pan immediately and cool on wire rack. Not removing them quickly will result in them to continue to cook. Hope you enjoy this recipe as much as we do.

Does anyone make their own pie crust? It’s really easy. I use flour, crisco (if I’m running low or out I sub with butter/margarine) but I much prefer crisco for my pie crust. Sugar, salt & ice water. Pie dough: 2-2 1/2CUPS flour 1CUP crisco 1TSP salt 1TBSP sugar Ice cold water about 8TBSP (This makes 2 pie crusts) Pie filling: 8oz can of apricots with juice, cut up 8oz can of pears with juice, cut up 2TBSP each of cornstarch & cold water, mixed 1/2CUP sugar (optional) Pinch, cinnamon, nutmeg & cloves Crumble: 1/2CUP flour 1/2CUP oats 1/2CUP brown sugar 1/3CUP butter or margarine
Crust: For your pie crust mix flour, salt, & sugar in bowl. I throw in a whole wack of mini pieces of crisco. Work in with my hands until dough becomes crumbly. You can have bigger and or smaller pieces of crisco in there. Make sure it’s well incorporated. Filling: Take another bowl add both cans of fruit with their juices, add sugar, and your cornstarch/water mixture. Mix well. Add in all your spices stir. Set aside. Crumble: Mix the flour, brown sugar & oats together well. Then add pieces of butter or margarine. Work in with hands until butter becomes crumbly in everything. You can do two small 6inch pies, one large pie or I did some mini 4inch ones. Roll out your dough. Place it in your desired pan. Not greased
Give your pie filling another stir then fill your pie/pies with filling. Now top them with the crumble.
Bake 375F about 45-55minutes. Til golden brown and bubbly.
We love cooking with cast iron! They slide right out of the pan and clean up so easy! Dessert was enjoyed tonight. Let us know what you think!
4CUPS all purpose flour 1CUP white sugar 1TSP baking soda 1TSP baking powder 1TSP salt 3/4CUP oil 1TBSP vanilla 4 eggs 1(8-oz.) canned sliced pineapple in juice, un-drained (save some for top- optional) 1 jar maraschino cherries, cut in halves, well drained ( save some juice & couple whole ones for top- optional) 1/2CUP milk
Heat oven to 325°F. Spray two loaf pans or I used one large one. In a bowl, combine flour, sugar, baking soda and salt, mix. Add oil, vanilla, eggs (I have pictured 3 eggs but I used 4), milk and pineapple with liquid, mix until combined. Fold in cherries.Spoon into greased pan. Bake at 325°F. for 45 to 55 minutes or until toothpick inserted comes out clean.
This is optional but I would recommend! 3/4-1CUP icing sugar and some of that maraschino cherry juice. Mixed together. You can make a thicker icing. I prefer it a little runny so I can drizzle over top.
Cool in pans for 10 minutes. Remove from pans, place on wire racks. Cool for an hour.
You can put some pineapples & cherries on top. I do it cause it makes it look prettier. Then drizzle icing over everything. This is optional. The loaf is just fine without the icing as well. This loaf is loved in our family. Excellent to have with a tea or coffee.
This cake is so delicious. It’s moist and tastes great!
