Date Turnovers

Package of dates
1/2 cup Water
2 TBSP Brown sugar
Pinch Cinnamon
Cook down, low heat. Til softened and combined.

The dough:
1/2cup butter or margarine
1/3 cup brown sugar 
1 egg
3 TBSP milk
1 TSP vanilla
1 cup all-purpose flour
1/2 TSP baking soda
&
Baking powder
1/4 TSP salt
1cup quick oats
1/4cup coconut

I have some extra flour on hand. Make dough into balls. About 20. Flatten each ball on a well floured surface and place on silicone sheet. Each cookie gets about 1 TBSP of date filling. Flip the cookies tops over. Bake 350 about 15-20 minutes. Til slightly browned

Sometimes, I like things simple. I just love raspberries and brie. And although I do prefer it with puff pastry. This really is just as good! My mother gave me this non stick copper pan before I left for Alberta. She had it for about 20 years and I’ve had it for 15. Still an awesome pan!

Brie with the top cut off, topped with fresh raspberries. Baked til melted. Serve with some baguettes.

Melt butter in a 13- x 9-inch baking dish or I like to use my cast iron pan.
Combine flour, 1 cup sugar, baking powder, and salt, add milk, stirring just until dry ingredients are moistened. Pour batter over butter, do not stir.
Place peaches around the batter. Sprinkle with cinnamon, if desired.
Bake at 375° for 40 to 45 minutes or until golden brown.
