Pineapple Strawberry Mini Cheesecakes

Pineapple Strawberry Mini Cheesecakes » RecipeCollage.com » November 22, 2024 — Fruit Filling:
2CUPS + cut strawberries
1/2CUP cut pineapples
1TBSP each white, brown sugar & flour
Mix to combine. Set aside.

Cream filling:
250ml mascarpone is what we used or cream cheese
1/2CUP heavy cream
1TSP vanilla
1/2CUP sugar
Blend all in large bowl with beaters til it’s whipped up nice and thick. Takes couple minutes.

Bottom:
1 1/2CUPS crushed gram crackers (reserve TBSP to sprinkle ontop)
1/4TSP cinnamon
Pinch salt
1/2CUP melted butter/margarine
Mix all bottom ingredients, mix well til all crumbs are coated in butter.

I save some pineapple and strawberries to top cheese cakes with after they come out of oven.

I take 1 1/2TBSP of gram mixture and spoon it in the pan. Then I take my fingers compressing the Gram crackers in the sides and bottom, making them compact having a well in the centre to put my cheese cake mixture in.
I fill with a good 2TBSP of filling in each spot. And then sprinkle the reserved Gram on-top.

2 1/4CUPS all purpose flour
1TSP baking soda
1 1/2TSP cornstarch
1/2TSP salt
3/4CUP Butter or margarine softened
3/4CUP brown sugar
1/2CUP white sugar
2 large eggs
2TSP vanilla extract
1CUP + chocolate chunks or chocolate chips. We used left over Christmas calendar Chocolates!

Lady Finger Cookies » RecipeCollage.com » November 22, 2024 — I like doing stuff like this. Making something into something new. I got some lady fingers at our local Italian store for 49cents a bag!! I used 3 bags here. I had some crushed canes canes and some shredded coconut off to the side. I used a double broiler to melt some chocolate. This is a Christmas Chocolate chip blend that we buy at the Bulk Barn, their delicious.

Some we put candy canes and or coconut inside the cookies with chocolate. You could use a variety of toppings here. Our favorites are candy cane and coconut. They don’t last long in our house. Great way to turn a vanilla cookie into something new!

2CUPS all purpose flour
3/4CUP cocoa powder
1TBSP baking powder
1/2TSP baking soda
1/2TSP sea salt
1 1/2CUPS sugar
Wet ingredients:
2 large eggs
8TBSP coconut oil is what we used or butter/margarine, melted
1CUP almond milk is what I used, any milk works.
1TBSP vanilla extract
Chocolate:
1CUP + chocolate chunks or chocolate chips. I used a Belgium Chocolate Snowman chopped up lol

Cinnamon Buns

Make some of these great tasting cinnamon buns and enjoy them today. Just follow the recipe below to get started.

Cinnamon Buns » RecipeCollage.com » November 22, 2024 — Dough Ingredients:
1CUP milk, room temperature
2TSP active dry yeast
Dissolve Milk, yeast, & couple TBSP of sugar. let sit aside til nice and frothy.
1/2CUP sugar
1TSP salt
2 eggs
4CUPS flour
Combine remaining of sugar, salt, eggs and flour til well mixed add in the milk/yeast mixture. Mix until combined into a nice ball. Place in oil bowl, covered, in warm place. Leave til doubled in size about 1 hour.
Filling Ingredients:
1CUP brown sugar
3TBSP cinnamon
Combine brown sugar & cinnamon, set aside.
1/3CUP butter or margarine, softened
Icing:
5TBSP butter or margarine, softened
1 1/2CUPS powdered sugar
1/4CUP cream cheese, room temperature
Mix all 3 icing ingredients together til smooth, set aside.

I like to use spatula or back of a spoon. spread evenly. Then sprinkle the brown sugar mixture over butter. Now roll up the dough, I cut just over 1inch size discs. Place rolls in baking dish, cover, and let rise again about a half hour. Until doubled in size.
Preheat oven to 350F. Make 18-20 minutes.
