Pie Crust, homemade or store bought pre baked Lime Curd: 3 large eggs 3/4 cup granulated sugar Pinch of salt 1/2CUP fresh lime juice Zest of 1 large or two small limes 4TBSP unsalted butter diced Place eggs, sugar, salt, juice, and zest in saucepan. Whisk the ingredients together until smooth. Place over low heat. Stir constantly with a wooden spoon until the mixture thickens, about 4-5 minutes. Add the butter. Stir until smooth. Remove from heat and pour into jar(s). Makes just shy of 2 cups.Place Curd in cooked Pie Shells. You can top with some whipped topping but we prefer them just the way they are.These are the pans we used to made these lime pies
Cookies: 2 1/2CUPS flour 1 1/2TSP baking powder 1/4TSP salt Combined top 3, set aside. 3/4CUPS butter or margarine, softened 3/4CUPS granulated sugar 1/4CUP brown sugar Cream Butter & Sugars together, then add 1 large egg 1 1/2TSP vanilla extract 2TSP lemon zest 2TBSP lemon juice 1/4CUP Milk MIx very well til everything is combined. Fold in 2CUPS fresh or Frozen blueberries and don’t over mix Preheat oven to 350F. You can just drop 1 1/2TBSP of dough ontop a parchment pan. or I flattened dough out and used cookie cutters to cut hearts outs. Bake about 12-15Minutes. Once cooled put glaze over top. Glaze: 1 1/2CUPS icing sugar 2TBSP lemon juice 1-2TBSP half/half or cream Combine all together til you get the consistency you want. I like thin like a glaze however some like it thicker more like an icing. These are one of our favorite cookies!
These are awesome!! We’ve only made them twice now but have turned out great both times. 1CUP flour 1TSP yeast 1/2TSP cinnamon 1/2TSP salt Mix top four ingredients in bowl set aside. Cream in another bowl 2TBSP sugar & 2 large eggs Add in Gradually the flour mixture til combined then pour 1/4CUP Milk, mix til incorporated. To make all the above fritters, I doubled this batch. Put in Oiled bowl, covered til doubled in size. I use a well floured surface and roll out dough in a rectangle shape. I place 1quart of my homemade apple pie filling covering half of the dough-you store bought filling if you want.
I flip the dough over covering all the pie filling. Then I take sharp knife and cut it all up into cubes. I take 3-4 cut squares and smooch together with my hands. Place on a non stick surface so they can rise and double in size about 45minutes to 1 hour.They will get pretty big but fritters are suppose to be largeDeep Fry 350 about 3minutes per side. Once Cooled I glazed them in an icing sugar/milk mixture.

We like to use plain nan bread for these. Take the Nan bread and top with Nutella. Add sliced Bananas, coconut & white chocolate chips on top. Of course, the toppings on these are endless so you can put what you want. I shove these in the oven under the broiler for just a minute. This melts the chocolate and toasts the coconut. Now just slice up the dessert pizza, serve and enjoy!

2 1/2CUPS all-purpose flour 1/4CUP cornstarch 1TSP baking powder pinch of salt 3/4CUP butter softened or margarine 1CUP sugar 1TSP vanilla extract 2 eggs Combine the flour, cornstarch, baking powder, and salt. Set aside. In another bowl, cream butter with the sugar and vanilla. Add the eggs, one at a time, and continue beating until smooth. With a wooden spoon, combine with the dry ingredients. With your hands, shape the dough into two discs. Cover them with plastic wrap and put them in the refrigerator for about 1 hour. On a floured work surface, roll out the dough to 1/8 to 1/4-inch thick. Cut out cookies, using a cookie cutter of your choice. Bake, one sheet at a time, from 8 to 10 minutes. Let them cool.
