1 3/4CUP all-purpose flour
1/2CUP cocoa powder unsweetened
1/2TSP baking powder
1/2TSP salt
1CUP butter or margarine, softened
1 3/4CUP granulated sugar
1/2CUP brown sugar
1 egg large
1TSP vanilla extract
Bag of dark chocolate covered cranberries chopped up (roughly 2CUPS)
1CUP cranraisins
Cream the butter & sugar in one bowl. Then add in the egg and vanilla mix well then set aside. In another bowl mix flour, cocoa powder, baking powder, salt.
Everytime we make cookies, I only ever cook half the batch or less. I like to always portion my cookies out on a sheet pan. Freeze on pan. Takes about a half hour. Then I throw them all in a ziplock bag and store in freezer so when needed I can just take out a couple here and there and they are ready to be cooked!
