Grand Barachois, New Brunswick » RecipeCollage.com » February 20, 2025 — Well our 14 days of isolation is almost over, and we can not wait!! It hasn’t been all that bad, but days are long and it does get boring after while. We are keeping ourselves busy, trying to make the best of it. Grand Barachois is pretty beautiful.
Lucky just loves the beach as does the kids. They still don’t get the tide going in and out per day they think that is super neat. Lucky loves flying through to each sandbar. He also loves the hot sand in his paws hehe.

Them both learning to drive the four wheeler, they loved that. Tim showing Bianca how it works. Tim also took down a wasp nest that was driving us nuts lol. Kids swimming lots in nanny’s pool, another few weeks before I can jump in there, I can’t wait. They can not get enough of the clam digging. They caught on fast how to dig for clams. They are so intrigued by the whole thing. We have had many clam digging days over the past week. They taste fabulous and are as fresh as you can get. Bianca learning to garden with nanny, she has a few gardens to work on, it keeps my mom busy.

We haven’t been fishing in Alberta since the kids were ages 2&4 so that whole experience was kinda new to them too. They loved it. Even know we didn’t catch any bass it was a great family day at the beach. Lucky doesn’t like the dock too much, but we’re sure in no time he will get used to it.

Fried Clams » RecipeCollage.com » February 20, 2025 — Our haul was very nice, we dug a ton. We divided them into 3 bowls and made 3 different dishes. These fried Clams are amazing! I used the largest ones we dug for the fried clams.

Fried Clams » RecipeCollage.com » February 20, 2025 — These are filled with sand they need rinsed out numerous times. If you let them sit in fridge overnight they will spit out a lot of there sand. These are soft shells so they are very delicate. You have to be careful while using them. Put in a medium pot cover bottom with about an inch of water, put clams in, cover and steam for a couple minutes til the shells open up. We try not to cook fully we just want the shells to open as we will deep fry them later. Drain, remove clams from shell, we place in a bowl with water.

These are soft shells so they are very delicate. You have to be careful while using them. Put in a medium pot cover bottom with about an inch of water, put clams in, cover and steam for a couple minutes til the shells open up. We try not to cook fully we just want the shells to open as we will deep fry them later. Drain, remove clams from shell, we place in a bowl with water.

We use 3 bowls, 1st with flour about 1/2CUP, 2nd bowl with an egg & milk mixed, and a 3rd bowl with CUP flour, TSP each of salt, pepper & cayenne (optional)
More salt if desired to sprinkle on-top when comes out of fryer.
Lemon wedges on the side to squeeze over the clams.

Finish coating all the clams before you start to fry them. Preheat deep fryer to 375F they only take 2-3minutes. Lay out on paper towel to remove excess oil, then we put them back in fryer for another 2 minutes. Gets them nice and crispy.

Isolation Family Photos » RecipeCollage.com » February 20, 2025 — This Pandemic has been really hard on everyone!! Anything we can do to bring smiles to ourself or others, is much needed at this time. If we all work together, we will get through this.
This experience was fun for our small family our teenagers will have this memory forever, I’m sure they won’t ever forget this! We had our outfits laid out for days and we forgot to put Lucky’s on for the photos ?, we couldn’t believe we forgot!

During this Pandemic, Tim and I are in a huge line while the kids sit in the vehicle while we wait to purchase hand Sanitizer at a local Brewery in Alberta!! Wow times sure have changed.

I’m pretty sure we were the only ones that bought 2 bottles, everyone was getting the 4. These bottles will be our keep sake of Alberta! They used many many different wine bottles to fill with hand sanitizer. We got the Uptown Girl Bottles, which are covered up now with Hand Sanitizer labels. Approved by the World Health Organization. Way to go Minhas, everyone stepping up their game for this Pandemic and it’s nice to see companies coming forward showing how much they care!
