
3/4 cup granulated sugar
Pinch of salt
1/2CUP fresh lime juice
Zest of 1 large or two small limes
4TBSP unsalted butter diced
I had lots of limes to use up. I made a double batch with this one.
Lucky loves being in the kitchen

Place over low heat. Stir constantly with a wooden spoon until the mixture thickens, about 4-5 minutes. Add the butter. Stir until smooth.
Remove from heat and pour into jar(s). Makes just shy of 2 cups.
