Lime Curd Mini Pies 1 Comment / Desserts / By Amanda and Tim / January 31, 2020 February 9, 2020Pie Crust, homemade or store boughtpre bakedLime Curd: 3 large eggs3/4 cup granulated sugarPinch of salt1/2CUP fresh lime juice Zest of 1 large or two small limes4TBSP unsalted butter diced Place eggs, sugar, salt, juice, and zest in saucepan. Whisk the ingredients together until smooth.Place over low heat. Stir constantly with a wooden spoon until the mixture thickens, about 4-5 minutes. Add the butter. Stir until smooth.Remove from heat and pour into jar(s). Makes just shy of 2 cups.Place Curd in cooked Pie Shells. You can top with some whipped topping but we prefer them just the way they are.
