Mandolin 2 potatoes, try to pat off excess water off potatoes. Fry in about 2-3TBSP of Vegetable oilMed-high heat. Stirring and flipping should take about take minutesTake out of pan, lay all out on a single layer on a paper towel so release excess oil. Sprinkle with salt & pepper. We like to dip these in a ketchup hot sauce recipe.
