Spring Roll Filling: 1LBS ground pork (can use chicken if you prefer) 3CUPS coleslaw mix 1/2CUP each julienned carrots & diced green onion 1 egg 4-8 cloves of garlic minced 1inch piece of ginger minced package of spring roll wrappers 1TBSP soya sauce You’ll also need: half bag of Mung Bean Noodles Flour/Water mixture to seal Wrappers
Mix some water and flour together to make a little paste to use to seal the spring roll wrappers. I find it easier to roll them when I flip the bottom corner up, like what I did in photo. But feel free to roll them the way you prefer. Take roughly 2TBSP of filling and put in wrappers, flip over once then fold in sides, put some paste on top corner and continue to roll the rest up til all sealed.
Deep fry at 375degrees roughly 2-4minutes per side. Depending how big they are.
This makes 30-50 spring rolls depending on the size. Let us know what you think!! Served them with a homemade peanut sauce.

We love this! Classic Thai dish. Packed with some much flavour and freshness. We like to get all our veggies prepped and ready to go. This dish cooks up super fast.
We like to use a large cast iron enamel pan, but feel free to use the pan that you prefer. Get your pan nice and hot. Add your oil and meat and fry til almost done. Then add in your red onions, garlic, Chilis, lime juice, sugar, fish sauce & salt to taste. Cook for a couple minutes on high heat. Add a handful of Thai basil, mint, green onions & cilantro. Mix til combined.
We get a large platter out. Cut some cucumbers up, jalapenos, get your lettuce cleaned and cut if big pieces, add some more Thai basil, mint & cilantro, sliced lime wedges. Place nicely all around platter nicely.
Then we put all the pork Larb on middle of platter. If your looking to change up taco night with a much flavourful and healthier option, this is definitely it! Hope you enjoy it as much as we do. Take a piece of lettuce and build it up with all those goodies, dive in because the platter isn’t going to last.
Everyone getting through this Pandemic ok? We hope so! These bring back a lot of childhood memories from my favourite Chinese food restaurant at House of Lam in New Brunswick. We love these, we wish pork ribs weren’t so expensive but they are. They are a treat in our family, we don’t make them often! Package of pork spareribs we like to use the bite size packages but you can use the full rack of ribs as well. Cut and separate all ribs. We boil them with some salt for about 20 minutes. 1 large onion chopped, 1inch pieces 1 green or red pepper chopped, 1inch pieces Lots of garlic Lots of ginger 2-3TBSP soya sauce 1-2TBSP cane sugar Lime juice, squeezed from half a lime 4-6 diced Thai Chilis 1TBSP vegetable oil 1-2 sliced jalapenos Garnish with cut green onions, optionalPrep all your veggies. We just cut the garlic in half and we leave the ginger pretty large, we love ginger!
We use a large cast iron wok to cook these, but you can use any oven safe frying pan as well. Get your wok nice and hot, add the oil and spareribs. Stirfry for a minute. Then add your soya sauce, sugar, garlic and ginger. Stirfry 5 to 7 minutes stirring frequently. Add in your onions and half your chilis, Stirfry a another minute. Now I put the wok in oven under the broiler for a few minutes stirring the spareribs a couple times, leaving them til they get a nice color. Now I return them to stove and add in the peppers, I Stirfry additional 2-3minutes.
Pour them out on your desired platter and dig in!! We served these with some papaya salad. Lucky is ready hehehe
Who doesn’t want a pizza Quesadilla? I know Lucky does lol. This is so simple. These are made with my homemade flour tortillas but you can use store bought tortillas as well. Now spread your tortillas out and top your pizzas. We went with simple tonight. Pizza sauce, pepperoni, mozza cheese, & crushed chilis It’s pizza so anything goes. You top them with that you like. Bake 425F about 12-15minutes til nice and crisp on bottom but still pliable to be able to fold.Take out of the oven fold in half immediately and cut into wedges. I cut them in 4 pieces each. Can you see me.. I’m way back there hehehe just making sure momma is serving it up soon!
The kids love them. Super simple, they cook fast and taste great!

Ingredients: 12 pack dinner rolls sliced in half Pizza sauce Pepperoni Cheese (your choice), we like getting a deal on cheese! Slider glaze: 1/4CUP melted butter Chopped parsley Dried Minced onions Oregano Minced fresh garlic Crushed chilis
I used my pizza pan for this but you can also put these in a casserole dish as well. Put the rolls down, spread inside bottom and inside tops of buns with pizza sauce, load the pepperoni on, load the cheese on. Saving some cheese for top of buns as well. Put the top of rolls on.
For your glaze. Melt butter and mix in all ingredients. I use a brush to brush tops of sliders. Sprinkle rest of cheese on.

Bake 400F about 20-30minutes. Sliders are so easy and fun! Kids love them.
