I made a pork roast last night so decided to make pies with the left overs. Cut up all my pork roast, added a cut onion, all left over veggies from the roast pork meal. Frozen pies. And some cooked cubed potatoes. Add in your left over gravy and mix well.
Pour in homemade pie crust or store bought.
I put some herbs in my dough.
Bake 350 about an hour. I make the pie fingers for my kids lunches. I love my cornbread pan.It gets eaten up fast in our house. Who doesn’t like a pie?Served with side of tomatoes, carrots & cucumbers
I got a big pork roast marinated in a rosemary garlic blend. Stuck in the oval Dutch oven over a bed of onions. Fill the sides with carrots, celery, garlic and spices of your choice. I put some salt, pepper, some thyme and rosemary. Baked covered 350 for 3-4 hours.Remove roast and Vegetables from pan . Make a pan gravy with the drippings. Yummy
These, were a huge hit! I’ve made them numerous times. Ive made them with sliced turkey, sliced ham. These are just great.
Beat eggs, milk, green onions, tomatoes, peppers, salt & pepper. Possibilities in this are endless. You put what you like.
I don’t use any non stick spray. I just put the meat in. Pour egg mixture in each slot. Top with your favorite grated cheese. Baked in my lodges at 425 about 20-30 minutes. Til fluffed up and brown.

1 quart Vegetable oil for frying 1CUP corn meal 1CUP all-purpose flour 2TBSP sugar 2TSP baking powder 1/2TSP salt 1 large egg 1 1/4CUPS buttermilk or milk 2TBSP butter melted hot dogs Smokies Onions sliced into thick rings Popsicle or craft sticks These were so good. I was planning on doing lots of stuff with them so I tripled this batch. I was able to get 24 hodogs done, 9smokies & loads of onion rings. Probably the best onions rings I’ve ever had! Those were the biggest hit. In a large pot, heat vegetable oil to 350 degrees Fahrenheit. I prefer to use my cast iron skillet. But a pot is safer. In a mixing bowl, stir together cornmeal, flour, sugar, baking powder, & salt. Beat in the egg, milk, and melted butter. Insert the popsicle or craft sticks into each hot dog/smokies. Pat each hot dog dry with a paper towel. Transfer batter to a tall drinking glass or I use a mason quart mason jar for larger batches for easy dipping. Dip each hot dog/smokie into the batter, covering the hot dog/smokie completely. After dipping, put immediately into the hot oil to fry. Fry each dog until golden brown, about 3-4 minutes per corndog. Turning dogs half way threw. Put on paper towels to drain.
When your done frying up the meat. Pour remainder of batter in bowl and start dunking those onions. Fry onion til Golden and crispy. Then spread out of paper towel to let it absorb up excess oil.
I sprinkle onion rings with seasoning salt. Anyone else ever make onion rings out of corndog batter before?
