This was so much fun and a huge hit. The house smelled incredible. All of us couldn’t wait to dig in. We love one pan meals. Whole chicken flattened whole onions carrots, parsnip, squash cut in dics, sweet potatoes, corn cob cut in half. I threw everything in a big bowl with 2 shallots, thinly sliced ½CUP (125 ml) olive oil 2TBSP (30 ml) store-bought piri piri spice 2TBSP paprika 1/2CUP (115 g) unsalted butter, softened 5-6 cloves garlic, chopped Salt & pepperMix well and plate nicely. I use my large cast iron pizza pan. Starting with my chicken first then start adding everything else.
Foil. Bake 350 couple hours. Remove everything from pizza pan, put pan over heat. Add some water, salt & pepper and thicken with a little flour/water mixture. Pour gravy over veggie plate and chicken plate. Enjoy that!
Little bit of everything tonight! The meal was chicken wings, rice & Szechuan beans. But I had some fish that needed cooked up so figured, why not! I started with the chicken wings. Sometimes. I just like doing them stovetop! I pan fry them in single layer on both sides til browned. Repeat batches til all done. Then add all back in, add chopped ginger, garlic, few TBSP of soya sauce, 1/2CUP water & 1TBSP hoisin. Cover, boil, 30 minutes. I thicken this with a cornstarch/water mixture. The green beans I put them in that pan just covered with water and boil til almost cooked. I drain water. And add about 2TBSP of this sauce. I make this sauce ahead this stores in my fridge til needed. 1TSP Szchewan peppercorns 1/4CUP soy sauce 3TBSP honey 1TBSP sesame oil 1TBSP rice wine vinegar 1TBSP Chinese cooking wine or mirin 3 garlic cloves, finely minced 2TSP fresh ginger, finely minced 1TBSP garlic chili paste more for more spicy or 1TSP chili flakes 1/2TSP Chinese five spice Pan fry beans and sauce for a couple minutes. Sprinkle with sesame seeds. Tilapia was descaled, coated in a flour, salt pepper mixture. And pan fried in cast iron pan til browned and crisp. Then I put in oven to finish off

Peek a boo This was fun and yummy! 3 Cornish hens White & Sweet Potatoes Parsnip Carrots Acorn Squash, turnip Red & White Onion Celery & garlic Sage, thyme, rosemary, garlic powder salt/pepper Stuffing Bacon
I kept the onions and white potatoes whole. I cut the squash in 3 discs, most carrots I kept whole some I cut in half. Sweet potato I cut up and parsnips left whole. Cut turnip. I get a big bowl throw in all the Vegetables along with hens. Add butter, and oil. Along with all the spices. Get in there with your hands and mix well until everything is coated nicely. I use my cast iron pizza pan. Put the 3 hens down then the 3 big pieces of squash down. I make 3 big stuffing balls to sit in the squash discs. Then with the remaining of room start stacking and placing on the vegetables on the pan. Sticking parsnips, carrots and or celery inside the hens as well. Fill in all the spots. With left over stuffing I also stuff some in here and there, wherever I can find room lol. What next you say?!

Cover bake 400 for an hour and half. I made a pan gravy & homemade cranberry sauce. Lucky didn’t leave my side for this recipe lol
Have some left over stir fry and chicken wings? Here’s one for ya. This was some left over stovetop spicy wings. And left over vegetable stir fry.With some left over spaghetti noodles added. All mixed together. Lucky is ready as am I. This was really good!
This was so fun. Took me some time to get all the ingredients together. We loved every dish.I’m not going to explain recipes. As I used and followed all the recipes on the boxes. These meals are so affordable and if your looking for something a little different with excellent flavours.
