I like to form a large ball. You can make these smaller. Make all balls til potato mixture is gone. I then take my thumb and put wells in centre of each ball. I fill well with 1TBSP+ of pork. Pick up each ball one by one, close them up. When I put them back down I pat them to flatten them out. I also put both sides down into flour, shaking off excess flour.
I pan fry these with some Vegetable oil till nicely browned on both sides. I then finish them on the oven at 425F to brown up all sides/edges about 25minutes.
