Spring Roll Filling: 1LBS ground pork (can use chicken if you prefer) 3CUPS coleslaw mix 1/2CUP each julienned carrots & diced green onion 1 egg 4-8 cloves of garlic minced 1inch piece of ginger minced package of spring roll wrappers 1TBSP soya sauce You’ll also need: half bag of Mung Bean Noodles Flour/Water mixture to seal Wrappers
Mix some water and flour together to make a little paste to use to seal the spring roll wrappers. I find it easier to roll them when I flip the bottom corner up, like what I did in photo. But feel free to roll them the way you prefer. Take roughly 2TBSP of filling and put in wrappers, flip over once then fold in sides, put some paste on top corner and continue to roll the rest up til all sealed.
Deep fry at 375degrees roughly 2-4minutes per side. Depending how big they are.
This makes 30-50 spring rolls depending on the size. Let us know what you think!! Served them with a homemade peanut sauce.
We have made this a variety of different ways. From different sauces to changing up the pizza toppings. This is always fun to make and everyone enjoys them.
Garlic Naan Bread (4-8 depending on how many you make) 1-2CUPS Béarnaise sauce scrambled eggs (we did 5 eggs for 3 pizzas) 1/2CUP mozzerolla 4 pieces of bacon (3 pizzas) Salt and Pepper
Make your favorite Béarnaise sauce. This is also excellent with a Hollandaise sauce as well but we much prefer it done with the Béarnaise sauce. Fry up your bacon and place on paper towel to remove excess oil. Break bacon into smaller pieces and set aside. Preheat oven to 400 degrees
Scramble your eggs with some salt and pepper, and grate your mozzerolla.Now the fun part assembling the pizzas. We just love the garlic naan bread we make a lot of different things with these. They are packed with so much flavor. Spread your Béarnaise sauce all over your naan bread, put scrambled egg all around, add some crumbled bacon. Top with some mozzerolla. We don’t find you need much, just a little bit.
Bake in preheated oven for roughly 8-10 minutes. Doesn’t take long. You literally just want the cheese to melt and the ssauce to be a good temperature.
Since we had almost 2CUPS of sauce and more Naan bread we made some more breakfast pizzas throughout the week. Some with just sauce, eggs and cheese and some with sauce, eggs, cheese, topped with Avocado. This is a favorite around here and doesn’t have to be just served for breakfast.
If you like ginger you’ll like this chicken. The sauce goes great with beef too!
12-15 chicken legs 8-10 cloves of garlic 2-3 2inch slices of ginger TBSP soya sauce & pepper to taste Sauce: 1/4CUP soya sauce 1/4CUP water 3TBSP each diced ginger & creamed honey 1TBSP diced garlic 1TBSP Hoisin sauce 1TBSP Sriracha sauce (optional) cornstarch/water to thicken sauce.
Put your chicken in a casserole dish, put your garlic cloves, ginger slices, 1TBSP soya sauce and pepper in dish and mix well. Bake in preheated 400degee oven roughly 25minutes.
While your chicken is starting to bake. You can make your sauce on the stove top. Add all your ingredients minus the cornstarch/water mixture. Bring to a boil and reduce to a simmer for 3-5 minutes. Once it tastes great you can bring temperature back up to a light boil and thicken it with a cornstarch water mixture. Take it off the heat.After 25 minutes of the chicken cooking, we drain out the excess oil from pan, flip the chicken and add in our sauce all over the chicken. Bake about 30minutes.
During the 30 minutes of baking we take out every 10 minutes to baste the chicken. This sure packs some ginger flavor, we love it! Can’t wait to hear what you think!

Bottom ingredients: 6-8 apples (skin removed, cored & cut up) 2TBSP each flour & white sugar 1TSP cinnamon (optional) Top ingredients: 1/2CUP each oatmeal white & brown sugar 2TBSP flour 1/2CUP butter
Get out your camp fire Dutch oven! This can be made in a cast iron skillet or pyrex dish in the oven also. Spray your pan your using with non stick cooking spray. Cut your apples up onto bite size pieces. Mix all your apples with your bottom ingredients and put in your Dutch oven.
For the topping we normally crumble butter up into all the topping ingredients. This time we just sprinkled all the toppings on top and put the butter around.
Make sure you have some nice hot coals going in the bonfire. This isn’t going to take to long. Put cover one, put over fire. Should be ready in roughly 15-20 minutes depending on the fire you have going. Note to self, don’t give a house tour while your cooking over the fire heheheLittle over done, but it sure was tasty!! Scoop of vanilla ice cream. We were happy. Let us know what your family thinks. Great thing to make on your next camping trip!
This was the best chili we ever made. Nothing beats cooking over an open wood flame! We love cast iron cooking. Got to dig out our late 1800s Cast Iron Cauldron, always enjoy cooking with it!
1LB ground beef 1LB sausage filling Half large white onion diced 1 small red onion diced 1 each green, red pepper & jalapeno diced (optional) 3-4 stalks celery diced 4-6 mushrooms sliced depending on size 2TBSP each cumin, chili powder and garlic 1/2TSP cayenne (optional) salt pepper 2cans diced tomatoes with herbs & spices 2cans tomato soup 1 can of tomato paste 3cups beef broth 1 can kidney beans (drained & rinsed) oil for cooking
Now sure who loved this more, me, the kids or Lucky hehehe!! Get your fire going. You want some nice hot coals. Set up your cast iron pot over the fire. I used 1TBSP of vegetable oil when the pan got hot.Add in both your meats, and start stirring well, til meats are well mixed together. Lucky keeping an eye on that meat, making sure it’s getting cooked lol.
Once meat is almost all cooked add in all your veggies, minus the beans. Add salt pepper. Give that a good stir and let that cook away. Once veggies are soft and tender add in all your canned stuff, beef broth along with rest of spices. Stir well.
Cook down for atleast 20 minutes or until you get that thickness you want. Weather was nice, we enjoyed some Mojitos Oceanside!
Catched up with an old friend for dinner!! Chili, Apple Crisp and Reconnecting was good. Bonfires are always fun!! Great thing to make on your next camping trip. Vegetables can all be prepped in advance! We like to have it with some sour cream, cheese and normally few pieces of avocado on top with tostito chips and a dinner roll on the side.
