Shrimp Envelopes
1 pack egg roll wrappers
2CUPS cabbage (green or red)
1diced white onion
1/2CUP each sliced green onions, celery, water chestnuts, mushrooms, & carrots
10-15 prawns
2TBSP each of minced garlic and ginger
1TBSP white sugar (I used cane sugar)
1TSP each soya sauce, hoisin, and oyster sauce
Thai Chilis optional as always
I make a glue in a small bowl with some flour and water to use to hold the wrappers together.

Deep Fried French Fries
Some people love fries though. Minimal ingredients, cheap, and cook up fast.
Anyone else make homemade fries at home? Or does most just buy frozen?
Do you prefer to peel the potatoes. We like skins on. I also prefer to make them with red skin potatoes. But Russets are good too.
In this recipe, my potatoes were small which results in smaller fries.
Clean potatoes, peel if you want
Cut with knife or use a fry cutter
Pat dry, removing all excess water on potatoes
Then turn the oil up til you reach 400F, deep fry each batch for 4-6 minutes til fries are crisp and golden.
Strawberry Pillows
2CUPS all purpose flour
1TBSP baking powder
1TBSP granulated sugar
1TSP salt
6TBSP butter or margarine, cold
3/4 cup whole milk is best but any works
3/4CUP Strawberry jam
Combine flour, baking powder, sugar, and salt in a bowl and mix well. Set aside.
Add milk, stir until combined (shouldn’t over work the dough)
I smooch 1 piece of dough all around pan making a little well in the middle. Using a muffin pan it will resemble more of a tart look at the bottom of pan. I put 1- 1 1/2TBSP of Strawberry jam in each pillow. Then cover each pillow with remaining of dough smooching down all around the edges to slightly bring the two doughs together.
Raspberry Strawberry Bars
1CUP granulated sugar
1/2TSP kosher salt
1CUP butter or margarine, room temperature
1 egg
1/2TSP vanilla extract
1/3CUP each strawberry & raspberry jam mixed together
In a large bowl mix together flour, sugar, and salt. Add in the egg, butter, and vanilla combine, I use my hands until the dough comes together.
Spread the raspberry strawberry jam on top.
Allow to cool completely
Made it extra special for my hubby and made a T (for his name Tim haha), he loved it!
