This was so much fun and a huge hit. The house smelled incredible. All of us couldn’t wait to dig in. We love one pan meals. Whole chicken flattened whole onions carrots, parsnip, squash cut in dics, sweet potatoes, corn cob cut in half. I threw everything in a big bowl with 2 shallots, thinly sliced ½CUP (125 ml) olive oil 2TBSP (30 ml) store-bought piri piri spice 2TBSP paprika 1/2CUP (115 g) unsalted butter, softened 5-6 cloves garlic, chopped Salt & pepperMix well and plate nicely. I use my large cast iron pizza pan. Starting with my chicken first then start adding everything else.
Foil. Bake 350 couple hours. Remove everything from pizza pan, put pan over heat. Add some water, salt & pepper and thicken with a little flour/water mixture. Pour gravy over veggie plate and chicken plate. Enjoy that!
This was a late night snack for hubby and I. We tend to go all out for our snacks cause it doesn’t happen often lol. I keep prawns skin/tail on. 1 quart Vegetable oil for frying 1CUP corn meal 1CUP all-purpose flour 2TBSP sugar 2TSP baking powder 1/2TSP salt 1 large egg 1 1/4CUPS buttermilk or milk 2TBSP butter melted hot dogs Smokies Onions sliced into thick rings Popsicle or craft sticks These were so good. I was planning on doing lots of stuff with them so I tripled this batch. I was able to get 24 hodogs done, 9smokies & loads of onion rings. Probably the best onions rings I’ve ever had! Those were the biggest hit. In a large pot, heat vegetable oil to 350 degrees Fahrenheit. I prefer to use my cast iron skillet. But a pot is safer. In a mixing bowl, stir together cornmeal, flour, sugar, baking powder, & salt. Beat in the egg, milk, and melted butter. Insert the popsicle or craft sticks into each hot dog/smokies. Pat each hot dog dry with a paper towel. Transfer batter to a tall drinking glass or I use a mason quart mason jar for larger batches for easy dipping. Dip each hot dog/smokie into the batter, covering the hot dog/smokie completely. After dipping, put immediately into the hot oil to fry. Fry each dog until golden brown, about 3-4 minutes per corndog. Turning dogs half way threw. Put on paper towels to drain.
When your done frying up the meat. Pour remainder of batter in bowl and start dunking those onions. Fry onion til Golden and crispy. Then spread out of paper towel to let it absorb up excess oil.
I sprinkle onion rings with seasoning salt. Anyone else ever make onion rings out of corndog batter before?
5TBSP butter 1TBSP vegetable oil 3 pounds, about 4 medium onions (I like to use a variety), halved lengthwise, peeled, and thinly sliced 1TSP salt 1/2TSP ground black pepper 1/2TSP granulated sugar 1 1/2CUPS dry white wine 6 cups beef broth 10 sprigs thyme or dried 2 bay leaves 1 baguette 4 garlic clove, cut in half lengthwise 2 teaspoons sherry 4 ounces Gruyère cheese or I like to use swiss
Use a large Dutch oven or other large pot, melt 3 tablespoons butter over medium heat. Add the oil and onions, cook onions until softened, stirring occasionally, about 15 minutes. Add the salt, pepper, and sugar. Continue to cook, stirring occasionally, until onions are deep golden brown and caramelized, reducing heat slightly if onions seem to be browning too quickly, 35 to 45 minutes more. Add wine and raise heat to high. Cook couple minutes. Add thyme, bay leaves, broth to pot with onions. Bring to a boil, reduce to a simmer, and cook, uncovered, until broth is thickened and flavorful, 20 to 30 minutes. Remove from heat and whisk in remaining 2 tablespoons butter. Taste and adjust seasoning. Our oven was down this week. So while we were waiting for parts to arrive. We used to BBQ a lot this week. Cut two 1/2-inch baguette slices for every serving of soup. Place baguette slices on a rimmed baking sheet and toast, about 1 minute per side. Rub one side of each toast with the garlic clove and set aside.Put couple cups of soup in bowl, add couple cut toasted baguettes, top with cheese and we put in BBQ to melt. Or under the broiler til browned. Which we much prefer but you have to do what you have to do!We have the PC Choice brand but this one is just as good.
Want a quick meal? Boiled spaghetti, prawns, garlic, cut tomatoes, a package of pesto and some olive oil. Cook the shrimp, garlic and tomatoes together. Add 3 TBSP pesto. Stir in pasta top with grated parm. Enjoy
