3 large leeks, cleaned very well, chopped
3 cloves garlic
4-6 large potatoes, peeled roughly chopped
8 cups chicken or vegetable broth
1 onion
2 bay leaves
3 sprigs fresh thyme or dried
1 teaspoon salt
1/4 teaspoon ground black pepper
1 cup half & half
Half cup grated cheese I used marble
Some cut green onions
I cook up the leeks, onions, garlic for a little bit.

I add the potatoes cook couple minutes more.

Then I add everything up to the salt/pepper. Bring to boil. And cook Vegetables. Once cooked I use my emersion blender and blend it all in pot. Even the bay leaves!

I then stir in half and half. If you like things rich use cream then stir some grated marble. Topped with some cut green onions.
We just love this soup!
We have the PC Choice brand but this one is just as good!

Big Breakfast

Herbed hash browns! Cut potatoes, vegetable oil, garlic powder, onion powder, thyme, rosemary & parsley. I put everything in large ziplock bag and shake. Then you can either bake them if you like crispy ones or pan fry them in cast iron which is what I did. Once cooked I like to throw some cut green onions on them.

Using the same pan, cook up some back bacon, regular bacon, ham and or sausages. Til browned and cooked.

Same pan again. Eggs your way! Hubby and I like sunny side up, which is what we had this morning. Accompanied by a side of beans which was cooked over the open fire in our Alberta backyard. Serve with your favorite toast.

It was our annual Christmas Market at our Church and all the fabulous ladies and gentlemen bring in stuff to donate for the baked sale. I made up Sugar Cookies. Lots of sugar cookies.
2 1/2CUPS all-purpose flour
1/4CUP cornstarch
1TSP baking powder
pinch of salt
3/4CUP butter, softened or margarine
1CUP sugar
1TSP vanilla extract
2 eggs

This was fun. They had some colored broccoli at my local market Saturday morning so we picked up a bag. The next day we had went to bulk barn to pick up a few things and I see these colored noodles lol. Made me think of my broccoli I had bought day before. I decided to buy about 2 cups of noodles.

Fast and easy dish here! 5 sausages out of the casings, onions, peppers, mushrooms, & garlic all cooked up then add pasta sauce, steamed broccoli, & cooked pasta. Definitely can be done without meat.

Herbed Tortillas

These are a little bit of work, rolling all out but they cook fast. You’ll never go back to store bought again! This is a basic 5 ingredient flour tortilla recipe.
3CUPS all-purpose flour
1TSP salt
1TSP  baking powder
1/3CUP vegetable oil, shortening, or lard
1CUP hot water
In a mixing bowl, combine flour, salt & baking powder. Then add vegetable oil. Stir until the mixture is coarse crumbs.
Pour in warm water and stir to combine. Knead with well-floured hands until the mixture comes together into a dough.
Transfer dough to a well floured work area. Divide into 16 roughly portions. Roll each portion into a ball and flatten slightly with the palm of your hand. Cover flattened balls of dough with a clean kitchen towel, allow to rest for at least 15 minutes and up to an hour.
When ready to cook, warm your pan. I use my Nordicware nonstick grill or a cast iron frying pan.
Roll each dough ball into a circle about 6”. Try not to stack the rolled tortillas on top of one Another. As you see I fill my island lol.

Transfer tortillas one at a time into the hot skillet. Cook for about 1 minute, until small bubbles form on the top and brown spots form on the bottom surface. If it takes much longer than a minute to see golden brown spots on the underside, increase the heat slightly. Flip and cook the other side for about 30 seconds.
Remove from the pan and stack cooked tortillas loosely wrapped in a clean kitchen towel. This will keep them soft. It may take a couple to get your pan to the temperature you want. If they become hard and not pliable, unfortunately you have cooked them too long.
These are awesome, they are so many uses. They freeze well.
Now for this recipe. I did some herbed ones. So when adding your flour, salt & baking soda. Add a half to a TSP of each spice you want to add. I used 1TSP oregano, 1TSP garlic powder, 1/2TSP onion powder.
