3TBSP margarine or butter 3TBSP all purpose flour 1/2CUP beer (whatever kind you want) 1CUP cream 1TSP each grainy mustard & Worcestershire sauce 1/2TSP garlic powder, salt, pepper, parsley, & cayenne 3 cups shredded cheese your choice (we used 1CUP swiss & 2CUPS marble)
Get your skillet on a medium to high heat melt your butter add your flour, cook for a couple minutes. Then add in your cream and beer. Use a whisk, bring to boil and whisk til thick. Reduce heat, add in all your spices, mustard & worcestershire sauce mix well.
Stir in your cheeses, and stir til all melted in. Serve warm. Excellent as a pretzel dip, on cooked Broccoli and cauliflower or as a taco dip. Really the possibilities are endless what you can have with this.
3CUPS warm milk (we used skim) 2TBSP brown sugar 3TSP salt, plus extra large Corse salt for sprinkling ontop 2TSP yeast 9CUPS all-purpose flour, plus more for work area if needed 4TBSP melted butter or margarine 1CUP each pizza sauce, pepperoni, & grated mozzarella 9CUPS water 1/2CUP baking soda 1 large egg, whisk
Mix together the warm milk, sugar and salt. Sprinkle the yeast on top, and wait 5 minutes for the yeast to bubble up. Add your flour to a big bowl and make a well in the centre of flour. Pour your yeast mixture in centre and melted butter all around. Mix well. Knead for 3-4 minutes til smooth. You can use a stand mixer. I just use my hands. Cover dough ball and bowl with a little bit of oil, cover bowl and let rise about 1 hour til double in size. This recipe makes 24 regular size Pretzels. We made 12 salted and 8 larger pizza ones. This recipe can definitely be cut in half.
Put the dough out onto a lightly oiled floured work surface and divide dough in half then each piece into 12 equal pieces each. Roll out each piece of dough into about 20 inch rope. Make a u-shape with the rope, then cross the ends over each other and bring them down to bottom and press them into the bottom of the U in order to form the shape of a pretzel.
Preheat oven to 450F. Line large baking pans with parchment or non stick baking sheets. Combine the water and baking soda in large pot, bring to boil and then reduce heat. I can usually get about 2-3 pretzels in pot at a time depending on their size. Light boil each pretzels about 30 seconds. After you boil them, lay out on non stick cooking sheet on a large cookie pan. Brush the egg wash on and sprinkle the coarse salt ontop. For Pizza ones, after done boiling them, put on lined cookie sheet, put pizza sauce all around them, then pepperoni then top with cheese.
Bake 450F about 10-12minutes depending on oven and depending on the color you want on tops.
We made an excellent creamy cheesy beer sauce to go with pretzels. Lucky saids, pretzel and cheese sauce gimme gimme.
3TBSP each flour & butter 1/2CUP diced red onion 1-2TBSP minced garlic Couple TBSP’s diced Chilis or jalapenos 2CUPS milk 3CUPS cheese of your choice (We used: 1/2CUP mascarpone, 1CUP Velveeta & 1 1/2CUPS mozza) I had put the flour in the pan for the picture but I didn’t cook it with the stuff right away, I took it out of the pan. Pan fry up the onions, garlic, peppers, & butter. Just til veggies become soft. Then add in your flour cook, low heat just a couple minutes.
Then stir in your milk, turn up the heat a bit. Whisking constantly til it’s nicely thickened. Then add in all your cut, cubed, and shredded cheese. Stir to combine. Shouldn’t take to long to melt away on there. I actually don’t put salt/pepper in. As my cheese’s have enough salt. But if you think yours need some, add it.
It’s nicely thickened now! This dip is great hot or cold.

I used 4 large smokies cut up. Can use appetizer size as well. Do you buy clearance items? I just can’t pass them up! We find groceries very expensive and just getting more and more expensive, so where ever we can save a buck or two we do! It all adds up, and it adds up fast when your feeding a family!I cut smokies in 1inch pieces then cut those 1inch pieces into fours. See photo. You don’t need back bacon/bacon. I had a few pieces to use up so put 1 piece on each skewer. Mix 1/4CUP brown sugar and your favorite hot sauce. I used a jalapeno hot sauce and a few shots of Franks.Skewer up the meat. You can use the cocktail size smokies but we prefer the large ones cut. The sauce gets right in the meat this way.Take brush and put sauce all over skewers on both sides. Lucky is staying close heheheBake 425F about 20 minutes, flipping half way through. We love them. Hope you enjoy them too
I used 4 large Smokies cut up or you can use coctail size as well I used back bacon, regular bacon is fine. Since back bacon is wider I cut them in half.
Half cup brown sugar 1TSP cayenne Mixed together. I put each piece of bacon in the sugar mixture, coating both sides. Set aside til all pieces of bacon done.Wrap the bacon around smokie, stick tooth pick threw so it holds bacon on nicely. Oh look it’s Lucky, he’s saids smokie, bacon, smokie, bacon, mom are they cooked yet LOL
Bake 425F about 20minites. Flip half way through. These are some tasty and a great hit in our family!Love cooking on our cast iron pizza pan
