Wonton Soup: 3CUPS stock or bouillon/water 3CUPS water 2TBSP each ginger and garlic (if you just want to flavour the soup leave pieces large to take out later. We enjoy eating it, I dice them up) 1TBSP white sugar, we used cane 2TBSP each soya sauce & chinese cooking wine 1TBSP sesame oil Put everything in a large pot and bring to a boil. Once boiling reduce heat, lightly boil till your ready for wontons.
I like to lay out a bunch of wrappers at once. I make a glue with flour/water. Put little bit in each corners. I place about 1TSP + filling in each. I don’t make mine fancy lol I just bring all my corners up together and smooch hehe
Once soup has been simmering for a bit. Add in your wontons, they will sink to the the bottom, I add in a small handful of cut green onions now too. Light boil about 10-15minutes. When they start to cook and be ready wontons will float to top. I sprinkle on more green onions when serving. We love soup, and this is one of our favorites!
2CUPS white beans soaked 1 onion diced 2 carrots diced 2 celery stalks diced 2-5cloves garlic minced (we used 5) 3 CUPS Chicken stock/bouillon 3CUPS water 2TBSP Italian spice 1TBSP parsley Couple bay leaves Salt/pepper 1 Ham hockThrow everything in a Dutch oven and or large pot. Bring up to a boil and light boil for an hour. Adding more water if needed.
Remove the ham hock, I give it a rinse under cold water to cool it down quicker. Separate all the meat from the bone and chop up roughly.
Put all your ham hock back in, stir, remove bay leaves and serve.We don’t eat enough beans in this house, it was enjoyed by everyone. I love making homemade soups!I have the PC Choice brand but this is about the same.
5TBSP butter 1TBSP vegetable oil 3 pounds, about 4-5 medium onions (I like to use a variety but today only used white onions), halved lengthwise, peeled, and thinly sliced 1TSP salt 1/2TSP ground black pepper 1/2TSP granulated sugar 1 1/2CUPS dry white wine (should be white, I only had red, so we used 1CUP red wine in this recipe)
7 cups water
Couple beef bouillon cubes
10 sprigs thyme or dried 2 bay leaves 1 baguette 4 garlic clove, cut in half lengthwise 2 teaspoons sherry 4 ounces Gruyère cheese or I like to use swiss
Fry up the onions with some, garlic, salt, pepper, butter & Vegetable oil.I cook til they become a nice color usually takes an hour plus. I add the herbs, bouillon cubes, water, wine, sherry and sugar in a bowl to set aside.
When onions are a nice color pour in your liquids with herbs. Light boil about an hour.Even know we used red wine it was still incredible! Should have a nice dark rich flavor.
Slice some baguettes and toast in oven and or toaster. Grate some cheese your using. I like to put about 1 1/2-2CUPS soup per bowl, 3-4 baguettes ontop, top with cheese. Turkey carcass Left over veggies Veggie scraps 1 carrot cut, 1 onion cut, 1 cut celery Bay leafs, thyme, rosemary, sage, salt & pepper. Garlic Fill with water. Boil couple hours.Drain! I forgot to take after picture. This will have a nice color, flavour, you should get about 6-8 cups. Pour in bowl, put in fridge overnight. All the fat will come to the top. Now some scrape this off and throw that out. Well that’s awesome stuff and can replace oil in recipes. I put in container, store in fridge and or freezer. I also freeze the stock in 1 1/2CUP portions. Til the day I get up the courage to use my pressure canner so I can bottle it! Wow this was a first and it’s not going to be a last! Just awesome. Great way to use up some turkey leftovers.I put in the oil and fat. Added the onions, celery, jalapenos, peppers, mushrooms, garlic and salt pepper. Cook for about 8-10 minutes on med high heat.Then add the tomatoes and tomato sauce. Stock. Then turkey and remainder of spices. Boil lightly til Veggies are all cooked then add in beans and corn.Lucky is ready! We ate it with some cornbread and taco chipsWe have the PC Choice brand but this one is just as good.
