Pork Belly & Rice Porridge Leave a Comment / Soups / By Amanda and Tim / December 11, 2019 January 18, 2020I took a 2 inch thick slice of uncooked pork belly, 2 cups of chicken stock, 2 cups water, 1/3 cup rice, garlic, ginger, Chilis, and couple TBSP soya sauce boiled it all for about 1 hour. I took out the pork belly and cut it all up very thinly. I added the pork back, cut up Chinese broccoli, enoki mushrooms, & 1 beat egg. Salt pepper to taste Different, we liked it.
Potato & Leek Soup Leave a Comment / Soups / By Amanda and Tim / December 11, 2019 February 9, 20203 large leeks, cleaned very well, chopped3 cloves garlic4-6 large potatoes, peeled roughly chopped8 cups chicken or vegetable broth1 onion2 bay leaves3 sprigs fresh thyme or dried1 teaspoon salt1/4 teaspoon ground black pepper1 cup half & halfHalf cup grated cheese I used marbleSome cut green onionsI cook up the leeks, onions, garlic for a little bit. I add the potatoes cook couple minutes more.Then I add everything up to the salt/pepper. Bring to boil. And cook Vegetables. Once cooked I use my emersion blender and blend it all in pot. Even the bay leaves! I then stir in half and half. If you like things rich use cream then stir some grated marble. Topped with some cut green onions. We just love this soup! We have the PC Choice brand but this one is just as good!
Mushroom Egg Drop with Bokchoy Leave a Comment / Soups / By Amanda and Tim / December 10, 2019 February 3, 2020One of our favorite soups, so simply, cheap, gets devoured fast!3 large eggs, beaten4 cups chicken stock1TBSP cornstarch 1/2TSP grated ginger1-2TBSP soy sauce 3 green onions cut1/4TSP white pepper3/4 cup mushrooms I put some bokchoy in this one to add some color and flavour.Add everything to pot but eggs and cornstarch. Bring to light boil til mushrooms are cooked. Doesn’t take long. Stir in beat eggs. I sometimes thicken it with cornstarch and sometimes I don’t want it like that. This time we didn’t thicken it.
