2CUPS all purpose flour, plus 2 teaspoons more for tossing with strawberries
2TSP baking powder
3/4TSP salt
1/2CUP Vegetable oil
1CUP granulated sugar
2 large eggs
1TSP vanilla extract
1/2CUP almond milk (any milk is fine)
2CUPS diced strawberries
1TSP white & brown sugar
Preheat the oven to 375°F.
Line a 12-cup muffin tin with paper liners, or spray the pan with non-stick cooking spray. I used my cast iron pan.
In a bowl, whisk together the flour, baking powder and salt.
Beat the butter and granulated sugar, vanilla and the eggs, scraping down the sides of the bowl and beating well.
Add the flour mixture in three separate additions, alternating with the milk and ending with the flour.
Toss the strawberries with 2 teaspoons each of sugars and flour, set 1/2 cup of the berries aside. Add the remaining berries to the batter and mix with a spatula until evenly distributed. Do not overmix.
