We have made this a variety of different ways. From different sauces to changing up the pizza toppings. This is always fun to make and everyone enjoys them.

Garlic Naan Bread (4-8 depending on how many you make)
1-2CUPS Béarnaise sauce
scrambled eggs (we did 5 eggs for 3 pizzas)
1/2CUP mozzerolla
4 pieces of bacon (3 pizzas)
Salt and Pepper

Make your favorite Béarnaise sauce. This is also excellent with a Hollandaise sauce as well but we much prefer it done with the Béarnaise sauce. Fry up your bacon and place on paper towel to remove excess oil. Break bacon into smaller pieces and set aside. Preheat oven to 400 degrees

Scramble your eggs with some salt and pepper, and grate your mozzerolla.

Now the fun part assembling the pizzas. We just love the garlic naan bread we make a lot of different things with these. They are packed with so much flavor. Spread your Béarnaise sauce all over your naan bread, put scrambled egg all around, add some crumbled bacon. Top with some mozzerolla. We don’t find you need much, just a little bit.

Since we had almost 2CUPS of sauce and more Naan bread we made some more breakfast pizzas throughout the week. Some with just sauce, eggs and cheese and some with sauce, eggs, cheese, topped with Avocado. This is a favorite around here and doesn’t have to be just served for breakfast.

Cut some watermelon up & plated some cherries. We sure do love homemade baked beans, but since space is a little issue living in the motorhome. Canned beans will have to do for now. The family loves buffet style.

Baked Carbonara

1TBSP extra virgin olive oil or butter/margarine
1/2 pound pancetta or thick sliced bacon, diced
2-4garlic cloves, minced
3-4 whole eggs
1 cup grated parmesan, fresh mozza ball
1 pound spaghetti pasta or fettuccine
1CUP frozen peas
Salt and black pepper

 Put a large pot of salted water on to boil
 While the water is coming to a boil, heat the olive oil in pan over medium heat. Add the bacon or pancetta and cook slowly until crispy.
Add the garlic and cook another minute, then turn off the heat and put the pancetta and garlic into a large bowl.
 In another bowl, beat the eggs and mix in about half of the cheese.
Once the water has reached a rolling boil, add the dry pasta and frozen peas, and cook, uncovered.
When the pasta is al dente, move to the bowl with the bacon and garlic. Let it be dripping wet. Reserve some of the pasta water.
Move the pasta from the pot to the bowl quickly, as you want the pasta to be hot. It’s the heat of the pasta that will heat the eggs sufficiently to create a creamy sauce.
Toss everything til combined.
 Add the beaten eggs with cheese and toss quickly to combine once more. Add salt pepper to taste. Add some pasta water back to the pasta to keep it from drying out.

I then place in a cast iron pan, put some fresh mozza around , top with more parmesan. Put under the broiler for just a few minutes. We enjoy baked pasta. Does your family like baked pastas?

This one had 4-5cups of bread crumbs. I dehydrate. I dehydrate just about everything. There is so many different kinds of breads in here. Which I find is what makes this so excellent. All the different textures & flavours.
2 eggs
1/4CUP herbed butter
Celery cut
Onion cut
Garlic
Raw bacon cut in very small pieces
Fresh thyme & lots of sage. Dried is fine as well. Salt/pepper
If you prefer you can saute the onions and celery in a pan before adding it to the bowl.

I add in about 2-3CUPS of hot chicken stock or if I have frozen Turkey stock I use that. Stir til well combined.

I put in my dutch oven oval dish. Top with pieces of bacon. Bake covered 350 about an hour leave uncovered last few minutes of cooking.
