Looking for something to do with those left over steamed mussels you couldn’t finish the night before? Why not incorporate them into a breakfast meal.
1CUP cooked mussels 5-6 eggs 1/4CUP milk half small red onion sliced 3-4 mushrooms sliced 2-3 cloves of garlic 1/4CUP cheese (we used Swiss, Mozzarella & Provolone) salt pepper little oil for your pan green onion (optional, to sprinkle on top)
I like to use a 10inch skillet for this. It’s going to go in the oven so you need a pan that can go in the oven. Fry up your onions, garlic, mushrooms, salt and pepper til soft. Beat your eggs with the milk, some salt pepper. Once eggs are beaten well add in your mussels and stir in.Now pour in your egg and mussels in the pan making sure the mussels get spread out evenly. I cook on a med heat for just a couple minutes.
Then pop in preheated 350 degree oven for about 30minutes til egg is done. At the 20minute mark you can top with some cheese and sliced green onion and continue cooking. You can also throw it under the broiler for the last couple minutes to get a nice color on the top. Which I much prefer but the kids do not! We enjoyed this. We served it on toast, feeds 4-6. If you like ginger you’ll like this chicken. The sauce goes great with beef too!
12-15 chicken legs 8-10 cloves of garlic 2-3 2inch slices of ginger TBSP soya sauce & pepper to taste Sauce: 1/4CUP soya sauce 1/4CUP water 3TBSP each diced ginger & creamed honey 1TBSP diced garlic 1TBSP Hoisin sauce 1TBSP Sriracha sauce (optional) cornstarch/water to thicken sauce.
Put your chicken in a casserole dish, put your garlic cloves, ginger slices, 1TBSP soya sauce and pepper in dish and mix well. Bake in preheated 400degee oven roughly 25minutes.
While your chicken is starting to bake. You can make your sauce on the stove top. Add all your ingredients minus the cornstarch/water mixture. Bring to a boil and reduce to a simmer for 3-5 minutes. Once it tastes great you can bring temperature back up to a light boil and thicken it with a cornstarch water mixture. Take it off the heat.After 25 minutes of the chicken cooking, we drain out the excess oil from pan, flip the chicken and add in our sauce all over the chicken. Bake about 30minutes.
During the 30 minutes of baking we take out every 10 minutes to baste the chicken. This sure packs some ginger flavor, we love it! Can’t wait to hear what you think!
This was the best chili we ever made. Nothing beats cooking over an open wood flame! We love cast iron cooking. Got to dig out our late 1800s Cast Iron Cauldron, always enjoy cooking with it!
1LB ground beef 1LB sausage filling Half large white onion diced 1 small red onion diced 1 each green, red pepper & jalapeno diced (optional) 3-4 stalks celery diced 4-6 mushrooms sliced depending on size 2TBSP each cumin, chili powder and garlic 1/2TSP cayenne (optional) salt pepper 2cans diced tomatoes with herbs & spices 2cans tomato soup 1 can of tomato paste 3cups beef broth 1 can kidney beans (drained & rinsed) oil for cooking
Now sure who loved this more, me, the kids or Lucky hehehe!! Get your fire going. You want some nice hot coals. Set up your cast iron pot over the fire. I used 1TBSP of vegetable oil when the pan got hot.Add in both your meats, and start stirring well, til meats are well mixed together. Lucky keeping an eye on that meat, making sure it’s getting cooked lol.
Once meat is almost all cooked add in all your veggies, minus the beans. Add salt pepper. Give that a good stir and let that cook away. Once veggies are soft and tender add in all your canned stuff, beef broth along with rest of spices. Stir well.
Cook down for atleast 20 minutes or until you get that thickness you want. Weather was nice, we enjoyed some Mojitos Oceanside!
Catched up with an old friend for dinner!! Chili, Apple Crisp and Reconnecting was good. Bonfires are always fun!! Great thing to make on your next camping trip. Vegetables can all be prepped in advance! We like to have it with some sour cream, cheese and normally few pieces of avocado on top with tostito chips and a dinner roll on the side. Lucky loves chili haha. Let us know what you think of the chili
We have only made these a couple times, they are always enjoyed. If your looking for something different you should try them out.
3 boneless, skinless chicken breasts cut into strips (can use thighs if you want as well) 1 green pepper sliced 1 red pepper sliced 1 jalapeno sliced half large Spanish onion sliced few garlic cloves sliced (we always use a lot of garlic in anything we make!) Can of Diced Tomatoes with spices Can of Tomato Paste 10 small flour tortillas roughly 2CUPS grated mozzarella 2TBSP of taco spice salt pepper to taste little oil of your choice for your pan
We like to get the pan nice and hot, add in olive oil, chicken and taco spice. Cook medium heat til chicken in partially cooked.
We then add in the onions, garlic salt and pepper. Cook til chicken in done and onions are soft.Peppers and Jalapeno doesn’t take to look long to cook to you can add them now and cook for a couple minutes until tender. Then you can add in your can of tomatoes and can of tomato paste. Stir cook down for a couple of minutes.
I took all the chicken and veggies out of the pan there is about a cup to a cup and a half of sauce left in pan. I used 10 small flour tortilla. Put a good piece of chicken in each along with some veggies and grated Mozzarella in each. Roll them up. When we put them in the pan, roll around in sauce to wet all of your tortilla.
There will be some sauce, veggies left over (from what you took out with the chicken/veggies) I put this over top of everything. Then cover with cheese bake 400 til cheese is melted and under the broiler if you want.
When done, we then top with a handful of chopped cilantro. Serve with a side of sour cream if you like. Weather is getting nicer out. The kids and I enjoyed dinner Oceanside!
We just love this pizza. We always have leftover chicken in the house. It’s a great way to do something different with it. Pizza Dough Bulls eye bbq sauce original flavor, we highly recommend using this brand but really any will do Left over cut up chicken Thinly sliced white or red onion, we like to use the red Thinly sliced green and red peppers 2-4 cloves of garlic minced, optional We do a little over 1CUP grated cheese per 12″pizza, we like to use mozzarellaIt was pizza night, we made a few pizzas. We love our cast iron oyster pan. Made 12 mini bbq chicken pizzas and one 12″ pizza. Also did a veggie and made an order of garlic fingers. Spread your pizza dough out in your desired pans. We use a spoon to spread the bbq sauce over the dough, then add your chicken, peppers, onions, and garlic if using. We then usually let this sit for about 15 minutes to rise a bit more, before adding the grated mozzarellaTop all pizza’s with mozzarellaWe also throw some crushed Chili’s on before baking, we love crushed Chili’s on our pizza.Bake 425F roughly 18minutes. Til cheese is nicely melted and golden brown. Let us know what you think. We make this a couple times a month.
