These got devoured quite quickly. Everyone enjoyed them. Do you make your pie dough or do you buy store bought? It’s really easy to make pie dough.32OZ canned peaches drained 1 1/2CUPS mixed frozen berries 1CUP white sugar 1/2TSP ground cinnamon 1/4TSP ground nutmeg 1TBSP lemon juice 1TBSP vanilla extract 1/2CUP all purpose flour 1 1/2TSP unsalted butter 1 egg beaten Preheat the oven to 350 F. I used a cast iron oval pan and a small cast iron frying pan. You can use a couple small pie pans. Add your pie crust. Set to the side. In a large mixing bowl add in the peaches, sugar, vanilla, lemon juice, cinnamon & nutmeg. Stir well. I then threw in 1 1/2CUPS of mixed frozen berries. Sprinkle in the all purpose flour, and fold the ingredients until everything is well combined. Toss in the butter or margarine and fold the ingredients.
Next, pour the peach mixture into the pie dish on top of the crust. Top off with the remaining crust. You can leave the crust whole or do a lattice topping!
Brush the crust with the beaten egg. Bake the pie in the oven for 50-55 minutes. Excellent with a little scoop of ice cream. I hope you enjoy it as much as we do.
Cut, oiled, salt & peppered. Bake 350 til doneSmooch down in pan with forkYou can use small marshmallows. I prefer to use the big ones cut in half.Now this is not suppose to look like this LOL. Put the pan under the broiler for just a few seconds til marshmallows rise and toast. If you do like me and wait 2 minutes, youll come back to a smoking kitchen and burnt marshmallows hahaha. Luckily I was able to peel that top burnt piece away and save the bottom! Lol The kids really like these
Does anyone else bake their squash? I prefer it baked. Keeps all the flavour in and bonus less dishes. Cut top off, and gutt seeds out. I normally just put 1/4CUP butter, salt, pepper & couple TBSP brown sugar. Put top back on bake 350 for an hour. This time I added my herbed butter in that had thyme and rosemary in it.Once cooked take a spoon and carefully stir around all squash/butter mixture together. You’ll like it!
