Cast iron
Fruit bread & Herbed Bread
3 cups water lukewarm
1 1/2TBSP active dry yeast
1 1/2TBSP salt
6 1/2 cups all-purpose flour
In a bowl add the warm water, salt and yeast stir.
In another bowl add flour & salt, then pour the yeast mixture over the flour and mix with wooden spoon.
Place the dough in a large container, and cover well. but do not close completely, there needs to be one corner left open to let the gases escape.
Let the dough rise for 2 hours up to 18hours.
The dough will be very sticky and elastic.
Add flour to your hands, and divide the dough in two pieces. Add more flour to your hands as necessary. Shape the dough into the desired shape for your bread and place it seam down in a hot Dutch oven. Sprinkle some more flour on top of the loaves. Let the loaves rest for another 30 minutes so that they can rise a bit.
Preheat oven to 450 F degrees.
Bake the bread for 30covered then about 8-12minutes uncovered til browned and crisp
Cool on a rack.

For the herb loaf. Add to the flour/salt- 1TSP each of crushed chilis, garlic powder, minced onion, rosemary & thyme. I also put 1/2CUP of extra old cheddar as well.
Baked Cornish Hens Dinner with all the fixings
This was fun and yummy!
3 Cornish hens
White & Sweet Potatoes
Parsnip
Carrots
Acorn Squash, turnip
Red & White Onion
Celery & garlic
Sage, thyme, rosemary, garlic powder salt/pepper
Stuffing
Bacon
I get a big bowl throw in all the Vegetables along with hens. Add butter, and oil. Along with all the spices. Get in there with your hands and mix well until everything is coated nicely. I use my cast iron pizza pan. Put the 3 hens down then the 3 big pieces of squash down. I make 3 big stuffing balls to sit in the squash discs. Then with the remaining of room start stacking and placing on the vegetables on the pan. Sticking parsnips, carrots and or celery inside the hens as well. Fill in all the spots. With left over stuffing I also stuff some in here and there, wherever I can find room lol. What next you say?!
He doesn’t get to get this close often… but just sometimes I allow it lol.

Nacho Dip
4 sausages out of the casing
1 onion, 1 pepper, some garlic, 2 cut up jalapenos
Can of olives
1 1/2CUPS salsa
Cheese
1/2CUP Velveeta, 1/2CUP cheddar
Fry up the ground beef, sausage, cut onion, pepper, garlic & jalapenos. Once cooked, add the salsa and cheese. Once cheese is nicely melted and combined add in the can of olives. Stir.
We love this dip! Freezes well. Great potluck and make ahead dish.
Cookin’ with my minis
We made homemade tortillas which we used to make some egg tacos.
We started outside. Although the sun was shining, it was quite windy and stove wasn’t working to well out there. So we moved it on inside.
Cooked well and tastes great!
