Were getting lots of cooking done being in the house all the time. Kids are enjoying helping us. Hope everyone is staying happy and safe during this Pandemic! Here’s a great early morning or afternoon recipe to try out. Bottom Layer: 1/2CUP brown sugar 4TBSP butter or margarine 2 apples of your choice. Sliced how ever you want Cake: 3CUPS all purpose flour 1CUP sugar 2TSP cinnamon 1TSP salt 3TSP baking powder 4 large eggs, beaten 2TSP vanilla extract 1CUP milk 3/4CUPS melted butter or margarinePreheat the oven to 350F and spray a 10-12 inch cast iron pan with non stick spray. For the bottom layer I spread around the soften butter with a spatula and sprinkle around the brown sugar evenly. Arrange the apples pieces in the pan how you like.In a bowl put the flour, sugar, baking powder, cinnamon, salt and mix well. If you have any apples left over I chop up finely and throw in flour mixture as well. In another bowl, mix the eggs with the milk and vanilla. Add the mixture to the dry ingredients along with the melted butter and combined until smooth. Pour the batter over the apples and spread evenly. Bake the cake in the oven until golden about 1 hour and 15 minutes. Once a tooth pick inserted comes out clean, it’s done :0)We let cool for about 10 to 15 minutes. Then run a knife all along the edges to lose the cake so it makes it easier to come out when flipped over.
Get a serving plate that is large enough to fit over cast iron pan. Lay plate over top of pan and flip cake quickly but carefully over. It should slide right out! This cake is enjoyed in our house at anytime of the day. Hope your family enjoys it as much as we do.

Ingredients: 2CUPS all purpose flour, plus 2 teaspoons more for tossing with strawberries 2TSP baking powder 3/4TSP salt 1/2CUP Vegetable oil 1CUP granulated sugar 2 large eggs 1TSP vanilla extract 1/2CUP almond milk (any milk is fine) 2CUPS diced strawberries 1TSP white & brown sugar Preheat the oven to 375°F. Line a 12-cup muffin tin with paper liners, or spray the pan with non-stick cooking spray. I used my cast iron pan. In a bowl, whisk together the flour, baking powder and salt. Beat the butter and granulated sugar, vanilla and the eggs, scraping down the sides of the bowl and beating well.
Add the flour mixture in three separate additions, alternating with the milk and ending with the flour. Toss the strawberries with 2 teaspoons each of sugars and flour, set 1/2 cup of the berries aside. Add the remaining berries to the batter and mix with a spatula until evenly distributed. Do not overmix.
Spoon the batter into the prepared muffin tin, I used my cast iron pan. They will be very full. Scatter the reserved berries evenly over the muffins.
Bake for about 30 minutes, until lightly golden and a tooth pick comes out clean. Run a sharp knife around the top edge of each muffin to free it from the pan, then let the muffins cool in the pan for about 25 minutes. Transfer the muffins to a rack to cool completely.

Well this recipe turned out great! Always goes quick with my helper hehehe. Ingredients: 4CUPS milk chocolate (chocolate chips, or random/left over chocolate is what we used) 1/2CUP each peanut butter & Nutella 1 can sweetened condensed milk 2TSP vanilla extract Toppings : Sea Salt & Thai Chili’s Chopped Roasted Peanuts
You can use whatever pan you want. Loaf pan if you want a large piece to cut thin, cupcake pan, 9×9 pan, cast iron pan whatever. I like to use a little bit of parchment on the bottom but non stick spray works good too.
Melt your chocolate, peanut butter, Nutella and sweetened condensed milk over low heat til melted and smooth. You can you use a double boiler if your not comfortable doing chocolate right on stove, or you can do this in the microwave (taking out every minute and stirring til all melted)Once all melted remove from heat and stir in vanilla til combined.
Pour into your prepared pans with spatula, and smooth around til pretty even. The fudge is excellent just like this! But we like to do a couple different flavors. We top some with cut up Thai Chili’s and Sea Salt. And others with chopped roasted peanuts. After you sprinkle toppings onto, you slightly smooch it into the fudge. Then make a couple with no toppings. Lucky thinks he’s getting some, sorry dude none for you! Momma give him some cheese hehehe
Refrigerate for 30-45 minutes. I use a butter knife and slide it all around the edge of the pan to loosen fudge, and it pops right out.
Cut into desired sizes. Fudge is Rich, so we find you don’t need a big piece. But you know your going back for a second one anyway haha. Their going fast! Store in air tight container in fridge.

We make this bread a lot. I start it before bed in a bowl, takes under 5 minutes. And bake in the morning. The kids love waking up to homemade bread as do Tim and I as well. Basic 4 ingredient white bread 3 cups water lukewarm 1 1/2TBSP active dry yeast 1 1/2TBSP salt 6 1/2 cups all-purpose flour In a bowl add the warm water, salt and yeast stir. In another bowl add flour & salt, then pour the yeast mixture over the flour and mix with wooden spoon. Place the dough in a large container, and cover well. but do not close completely, there needs to be one corner left open to let the gases escape. Let the dough rise for 2 hours up to 18hours. The dough will be very sticky and elastic. Add flour to your hands, and divide the dough in two pieces. Add more flour to your hands as necessary. Shape the dough into the desired shape for your bread and place it seam down in a hot Dutch oven. Sprinkle some more flour on top of the loaves. Let the loaves rest for another 30 minutes so that they can rise a bit. Preheat oven to 450 F degrees.
