This is a tasty Christmas fried chicken recipe that is sure to please. Just follow the recipe below to get started on this festive recipe.
I get 3 bowls, or containers 1st bowl: flour, salt, & pepper 2nd bowl: beat eggs 3rd bowl: Christmas rice krispies slightly crushed, flour, & Cajun spice.Dump all pieces of chicken separately into bowls 1, 2, & 3. Once all are cooked get your oil up to temperature. I like it around 350-375F. Today we used a cast iron pan.Deep fry roughly 6 minutes per side. We don’t eat fried chicken too much but I always make a batch of this around Christmas time. Let us know what you think!
We used this cast iron chicken fryer in this recipe:
Dry ingredients: 2CUPS all purpose flour 3/4CUP cocoa powder 1TBSP baking powder 1/2TSP baking soda 1/2TSP sea salt 1 1/2CUPS sugar Wet ingredients: 2 large eggs 8TBSP coconut oil is what we used or butter/margarine, melted 1CUP almond milk is what I used, any milk works. 1TBSP vanilla extract Chocolate: 1CUP + chocolate chunks or chocolate chips. I used a Belgium Chocolate Snowman chopped up lol
Mix all the dry ingredients together, then add in the wet ingredients. Stir, mix until well incorporated.
Stir in your chocolate. Spray your muffin tin or line with muffin cups. I use my Cast Iron Oyster Pan and My cast Iron cornbread pan for this. Love cast iron!Bake 400F about 20minutes. Pie Crust, homemade or store bought pre baked Lime Curd: 3 large eggs 3/4 cup granulated sugar Pinch of salt 1/2CUP fresh lime juice Zest of 1 large or two small limes 4TBSP unsalted butter diced Place eggs, sugar, salt, juice, and zest in saucepan. Whisk the ingredients together until smooth. Place over low heat. Stir constantly with a wooden spoon until the mixture thickens, about 4-5 minutes. Add the butter. Stir until smooth. Remove from heat and pour into jar(s). Makes just shy of 2 cups.Place Curd in cooked Pie Shells. You can top with some whipped topping but we prefer them just the way they are.These are the pans we used to made these lime pies
2-3TBSP butter/margarine 3TBSP chopped fresh cilantro 3-5 garlic cloves, minced 1 inch ginger minced 2TBSP piri-piri sauce/spice or other hot pepper sauce 2TBSP fresh lemon juice, bottled is fine 1 large onion sliced 1/2CUP water Whole chicken cut in half or in pieces Salt/pepper When we buy our chicken in bulk we like to freeze a bunch in there sauces we will make with them. I add all of the above to a freezer bag minus the butter, mix well. And freeze til I need.I thaw, add the bag with all its contents along with the butter and slow cook at 300F about 4 hours. I baste the chicken about every 45minutes. If using a whole chicken when it starts to darken up, I cut the pieces all apart so they will get a nice color everywhere.

Aka Strawberry Jam & Biscuits 2CUPS all purpose flour 1TBSP baking powder 1TBSP granulated sugar 1TSP salt 6TBSP butter or margarine, cold 3/4 cup whole milk is best but any works 3/4CUP Strawberry jamPreheat oven to 425F and spray muffin pan. This can be done on just a regular cookie pan which is what I used to use before I had this dish! Either pans work Set aside. Combine flour, baking powder, sugar, and salt in a bowl and mix well. Set aside.I cut the cold butter/margarine up in cubes and mix in until the mixture resembles coarse crumbs. Add milk, stir until combined (shouldn’t over work the dough)
I like to take the dough and divide it all up roughly into 24 balls/pieces I smooch 1 piece of dough all around pan making a little well in the middle. Using a muffin pan it will resemble more of a tart look at the bottom of pan. I put 1- 1 1/2TBSP of Strawberry jam in each pillow. Then cover each pillow with remaining of dough smooching down all around the edges to slightly bring the two doughs together.
Bake at 425F for about 12 minutes or until tops are beginning to brown.
I remove from pan right away. You can also brush these with butter when they come out but we find its not needed.Love this pan! We use it so much!
