We enjoy using left overs and turning them into something new. Good way to go threw the fridge, see what you have, and what you can come up with. Left over roast chicken roughly 2CUPS Left over roasted veggies 2CUPS(mine were onions, celery, carrots & red cabbage) Left over broccoli potato soup, use a cream of broccoli if you want 1-2CUPS Cheese. 1CUP Whatever melting cheese you have in the fridge. I used grated mozza, some Bocconcini and Parmesan.I mix everything together, reserving some of the cheese for the top.Pour in a casserole dish! Top with remaining of cheese. Chicken, and cheese, do I smell chicken? I’m just going to sit right here Lucky saids lol
I’m still sitting pretty way way back here, mom you see me. I’m being a good boy haha. Bake 400F for 20-30minutestil top is nicely browned. Oh look Lucky’s back hehehe

Our casserole dish is very similar to this one!
3/4 – Pound ground beef 1 cut onion 4-5 cloves of garlic minced Fried til meat is cook and vegetables are tenderAdd 2-3TBSP taco spiceMix well. Finish cooking. These are our favorite nacho toppings, what are yours? Ground beef Green onions Black olives Tomatoes Jalapeno harvarti JalapenosOne thing I can’t stand is soggy nachos!! They aren’t suppose to be soggy. If your using olives they have to be squeezed really well of their water. Tomatoes are excellent on nachos but don’t cook them on the nachos. Throw some optop when serving! They will make the chip soggy fast. I have to make a big batch of nachos cause my family loves them. I do 3 layers. Everything on each layer. Bake in a preheated oven 425F for about 10minutes. We serve sour cream and salsa on the side. Once in a while will have some guacamole too. I bake these in individual cast iron skillets so everyone gets to make/have their own nachos.
This was a look in my fridge clean out kinda dip night lol. Jar of artichokes cut up Creamed cottage cheese Ricotta Cream cheese Mayo Sour cream Fresh spinach Onion chopped Garlics chopped Salt/pepperSaute spinach, onions, artichokes, garlic with some Vegetable oil. Until all is nicely softenedAdd in about 1/2CUP sour cream, 1/3CUP mayo and all your cheeses. Stirring til well combined and all melted in. You really can’t go wrong with this dip! Great with baguette, crackers, Vegetables, and even pretzels!
Cheese logs, balls are expensive to buy! I always have cheese in the house and normally a big variety. Were always finding a deal or clearance on cheese! 4TBSP herb garlic cream cheese 4TBSP each extra old white & harvarti TBSP chopped garlic Onion powder Garlic powder Parsley Chili flakes Italian spice Mix well until all incorporatedI put in saran wrap and shape once it’s in there. I place in fridge for atleast 4 hours. I take out and smooch it down into some slivered almonds and cranraisins.
Its funnier and well just tastes better making your own. Knowing it isn’t filled with all these extra fillers.I made this log to go with our Christmas Eve snacks.
