Vanilla Banana Coconut Layered Dessert

This dessert is a super simple recipe to make. Our kiddos absolutely loved them. This makes a terrific after school snack. This vanilla banana coconut layered dessert will be sure to please.

Vanilla banana coconut layered dessert

Ingredients:
2 packs of vanilla pudding
1CUP crushed gram crackers
1/2CUP coconut
2-3 sliced bananas
8 – roughly 1 cup serving dishes, I used glasses.

Prepare your pudding. I use a piping bag to put the pudding in glasses but you can just use a spoon. Cut your bananas up. Prep your work area, have everything ready to layer your dessert.
I start with a TSP of gram crushed crackers on the bottom, then pudding, then a few pieces of bananas, a little bit of coconut. Then start all over again until cups are full. Usually, I can get 3 layers.

Lady Finger Cookies

I like doing stuff like this. Making something into something new. I got some lady fingers at our local Italian store for 49cents a bag!! I used 3 bags here. I had some crushed canes canes and some shredded coconut off to the side. I used a double broiler to melt some chocolate. This is a Christmas Chocolate chip blend that we buy at the Bulk Barn, their delicious.

Once melted we dip the vanilla cookies in the chocolate, some we make sandwiches with, some we put chocolate just on the ends or just on the tops. some we top with coconut, and or candy canes. Some we put candy canes and or coconut inside the cookies with chocolate. You could use a variety of toppings here. Our favorites are candy cane and coconut. They don’t last long in our house. Great way to turn a vanilla cookie into something new!
