These are becoming a favorite around here! They are great with any kinda of open shellfish.

10-12 large Mussels
2CUPS cooked rice vermicelli noodles
1TSP each of Sriracha
Garlic Chili Sauce
Sweet chili sauce
lime juice
Hoisin sauce
sesame oil
fish sauce & Oyster sauce
2-3 thai Chili’s (optional)
1/4CUP green onions sliced
Sliced green onions for garnish (optional)

Put everything in a bowl and mix well.

Baked 350degrees roughly 12-15minutes. Depending on your oven!

We had a great day down at the beach digging clams, we dug a ton, made 3 different dishes with them.
Bowl of fresh clams, soaked in water overnight, drained multiple times.
1TBSP each of oyster & hoisin sauce
1TSP each soya sauce & fish sauce
Red onion, sliced thinly
3-4garlic cloves minced
4 Serrano peppers, sliced, any pepper would do
2-3 Thai chilis
10 snow peas, sliced, we slice them on a slant. Slice them any which way you want.
Half lime squeezed in.

Pound of ground Pork
1/4 red onion sliced
4-6 green onions sliced
Lots of fresh Thai basil
Lots of fresh mint
4-8 cloves garlic chopped
Lime, cut into wedges
1/4CUP lime juice
2TBSP fish sauce
Sugar to taste
Salt
1-2sliced jalapenos
1TBSP crushed chilis
Bunch of Thai chilis
Bunch of cilantro
Lettuce of your choice
Cucumbers sliced
Vegetable oil or oil of your choice

We love this! Classic Thai dish. Packed with some much flavour and freshness.
We like to get all our veggies prepped and ready to go. This dish cooks up super fast.

Looking to jazz up your popcorn? If you like all those Thai flavours and like a little heat, we think you’ll love this!! It’s a must try.
1/2CUP each of butter (or margarine), brown sugar & roasted peanuts
3TBSP Sriracha
2TBSP each cut green onions, garlic, jalapenos & cilantro
1TBSP each cut Thai Chili’s & fish sauce
Zest from a lime, juice from a lime
3bags Microwave Popcorn (you can make your own if you prefer)

1LBS napa cabbage, chopped into quarter size
 1LBS bok choy, trimmed and quartered
lengthwise
1carrot julienned cut into inch long pieces
3-4 green onions cut into inch long pieces
 1/3CUP salt
 1/4CUP sugar
2TBSP fish sauce
2TSP ginger cut
 3TSP minced garlic
2TBSP crushed chili peppers or Loren red pepper flakes if you have it.
1TBSP each sesame oil & toasted sesame seeds

Store in airtight container on counter overnight then put in fridge in the morning. You can eat it right away or wait for until it starts to ferment. If stored properly this will last a couple months in fridge. Put we all know it’s too good to make it last that long. Kimchi is super flavourful and great for you. You can enjoy this how it is, as a side, cooked in a dish. It’s delicious. We can’t wait to hear what you think.
