Cranberry Ginger Cake

2CUPS fresh or frozen cranberries
1CUP sugar
1stick butter or margarine
2/3CUP brown sugar
1/2CUP each of milk & maple syrup
1/4CUP molasses
1 1/4CUP all purpose flour
1TBSP ground ginger
1/2TSP each ground cinnamon, baking powder & salt
1/4TSP each baking soda & black pepper
2 large beaten eggs
1TBSP fresh ginger.
Icing:
Cream cheese icing, candied cranberries

Heat oven to 350 degrees and grease a nine inch square pan. I used two smaller cast iron pans to make a double decker cake.
In a small, saucepan, stir together cranberries, granulated sugar and 1 tablespoon water. Stir the cranberries over medium heat until the sugar is completely dissolved and cranberries form a sauce that is bubbly and thick about 10 minutes. Half the cranberries should be broken down with the remainder left whole.
In a separate saucepan, stir together the butter, brown sugar, milk, maple syrup and molasses over medium heat. Bring it to a low simmer and then remove it from the heat. Do not let it come to a boil, or the mixture may curdle.
In a large bowl, sift together the flour, ginger, cinnamon, baking powder, salt, baking soda and black pepper. Beat in the butter-maple syrup mixture and then beat in the eggs. Stir in the ginger.
Scrape the batter into the pan. Drop cranberry sauce onto the surface of the cake batter. Drag a skewer stick through the batter mixing cranberries in nicely, as if you are marbling a cake. Transfer the cake to the oven and bake it until the top is firm and a toothpick inserted in the center comes out clean, about 50 minutes. Transfer the pan to a wire baking rack and let the cake cool completely before eating it.
Mine took less time as I did smaller cakes.

I layered with cream cheese icing and candied cranberries between the cakes and on top. Made this twice now, we love it!
Icing isn’t needed but we love it.

1 pound lean ground beef or pork
3CUPS cooked sticky rice
2-3 sliced mushrooms preferrably shiitake mushrooms but any mushrooms work.
1CUPS cooked pork belly could use raw but I prefer cooked in this
3TBSP sliced green onions
2TBSP each garlic & ginger, minced
14-18 pieces of napa cabbage with stem cut off
2TBSP each soya sauce, oyster sauce & cornstarch
1 egg

Get a work surface all prepped. I like to fill a few at a time so need some room. I take a good 3TBSP + of filling and make them inside cylinders in my palm. Put the fillings towards bottom near stem. Starting at stem roll up and over. Putting seal side down in your steamer.

I had ran out of bigger cabbage pieces so made some with cabbage wrapped around a ball like a dim sum and then I ran out of cabbage lol so thinly sliced a few carrots and put the last filling on them, which I made into balls.

But the main ingredients I use are. Lots of green & red Chilis, big chunk of ginger, lots of garlic, & lots of green onions small.
Cup soya
TBSP sesame oil
1/2CUPSugar
1/3CUP Rice vinegar ( this changes for me. I like to use sherry, or red or white wine vinegar also whatever I happen to have on hand)

Chop everything up nicely. I put sesame seeds in this batch but I don’t normally do that. I usually just add some to recipe when cooking.
You really can’t go wrong with ingredients. You will get to a great flavour with all this freshness. You’ll know if you need more sugar and or garlic or heat.
This last for a couple weeks in our fridge and I use 2-3TBSP for recipes either to cook with, marinate, or its excellent just as is, as a dipping sauce

I squeeze almost a whole lime in. If I don’t have lime, I use lemon.
This sauce is a big hit in our family everyone loves it.
