Fry your meat up in pan til it starts to brown, then add in your onions, garlic, peppers and spices. Cook medium heat til everything is done. I told Lucky we aren’t putting Nachos together for a while, but he insists on sitting there waiting LOL

1 pound lean ground beef or pork 3CUPS cooked sticky rice 2-3 sliced mushrooms preferrably shiitake mushrooms but any mushrooms work. 1CUPS cooked pork belly could use raw but I prefer cooked in this 3TBSP sliced green onions 2TBSP each garlic & ginger, minced 14-18 pieces of napa cabbage with stem cut off 2TBSP each soya sauce, oyster sauce & cornstarch 1 egg
I get the kettle going with water, and pour the hot water over the napa cabbage for about 5 minutes. Then drain. Mix everything in a bowl together minus the cabbage. I use my hands for this, you want it well combined.Get a work surface all prepped. I like to fill a few at a time so need some room. I take a good 3TBSP + of filling and make them inside cylinders in my palm. Put the fillings towards bottom near stem. Starting at stem roll up and over. Putting seal side down in your steamer.I had ran out of bigger cabbage pieces so made some with cabbage wrapped around a ball like a dim sum and then I ran out of cabbage lol so thinly sliced a few carrots and put the last filling on them, which I made into balls.
Gotta have a dipping sauce! 1TBSP each soya sauce, rice vinegar, garlic minced, and ginger minced 2TSBP sweet chili 1TSP sugar 1TSP crushed Chilis, optional Delicious sauce that can be used for a variety of stuff! The kids love it.
Steam about 30-40 minutes.

We have been working with lots of pork belly lately. Reading and watching lots of videos. Learning different techniques, dishes and how to prepare them. There are lots of ways to cook pork belly. Sometimes great food, takes a long time. Most wouldn’t even attempt this dish because of the length and process. But for us, it’s quite rewarding to get to the end result and see how delicious it is! This pork belly dish is not greasy, meat melts in your mouth. I used 1 foot long piece by inch thick of pork belly for this one dish. Sliced in half. Put in a pot. They sell a big pack of pork belly at Costco for an excellent price, and pork belly goes a long way. I pour roughly 2TBSP soya sauce, 2TBSP Chinese cooking wine, some sugar (1TBSP we used cane sugar) sliced green onions and sliced ginger. Cover with water and bring to boil. Boil for 10minutes. Take out of water, and dry as much as possible. Let it sit out for a half hour or so while you get your pan of oil heating.
Now I like to fry mine a little longer to get that color on outside but you don’t need it that dark. Be careful when frying, grease is going to spit at you, you want a cover your pan/pot. Fry couple minutes per side. As soon as you take it out of the grease put in a bowl of ice cold water and in the fridge for overnight. Makes the meat nice, and tender inside.
Look how excellent that looks? Wowzers! Nice dark color on outside, cooked perfectly inside! Its ready to be used in any dish you like. It slices up very nicely cut these pieces a little thicker. Were going to make it extra special and now I’m going to steam this for 4-6hours. Use a heat safe bowl and place pork belly nicely all on bottom of the bowl. Your going to flip it out later so you should place pork in there nicely so looks good when done.
We use the same stuff we boiled it with. Poured over pork belly roughly 2TBSP each of soya sauce, chinese cooking wine, and sugar. I top with sliced green onions, ginger and a couple star anise.
Steam on stove in your steamer. For 4-6 hours. I do about 5. When it’s done, carefully drain out liquid into small sauce pan. And flip bowl of meat out on to a plate. Lucky been waiting forever, he’s so ready! Sorry dude not ready yet hehehe.
Thicken your sauce with a cornstarch/water mixture.
Pour all that goodness all over the pork belly!I like to let that sit for a little bit to let all the sauce go down inbetween the meat. It’s ready Lucky said, he can’t wait lol

Wontons: Package of Wonton wrappers Half pound ground pork Half pound chopped raw shrimp 2-3green onions sliced 1-2TBSP diced ginger 1TBSP soya sauce 2TBSP cooking wine 1TBSP sesame oil Mix all together very well. Wonton Soup: 3CUPS stock or bouillon/water 3CUPS water 2TBSP each ginger and garlic (if you just want to flavour the soup leave pieces large to take out later. We enjoy eating it, I dice them up) 1TBSP white sugar, we used cane 2TBSP each soya sauce & chinese cooking wine 1TBSP sesame oil Put everything in a large pot and bring to a boil. Once boiling reduce heat, lightly boil till your ready for wontons.
I like to lay out a bunch of wrappers at once. I make a glue with flour/water. Put little bit in each corners. I place about 1TSP + filling in each. I don’t make mine fancy lol I just bring all my corners up together and smooch hehe
Once soup has been simmering for a bit. Add in your wontons, they will sink to the the bottom, I add in a small handful of cut green onions now too. Light boil about 10-15minutes. When they start to cook and be ready wontons will float to top. I sprinkle on more green onions when serving. We love soup, and this is one of our favorites!
Pizza Dough rolled out to a square as good as you can. These are pizzas so really anything goes on here. Use ingredients you like. We skipped out on pizza sauce today as we wanted to use lots of fresh tomatoes with herbs instead. My family loves pizza rolls, great for school lunches also. I places sliced tomatoes out diced mushrooms black sliced olives sprinkled garlic powder, Italian spice, crushed chilis I laid out a bunch green onions, kept long cause were going to cut into rolls anyway cut salamiTop with cheese or your choice. We used a grated marble today.
Roll up, and cut into about 1inch discs. I spray a glass casserole dish or a couple cast iron pans. Place rolls in. I top with some more marble and parmesan. Cover and let rise for 30-40minutesBake 425F for about 25minutes. I hope you enjoy these as much as our family does.
