One thing I can’t stand is soggy nachos!! They aren’t suppose to be soggy. If your using olives they have to be squeezed really well of their water. Tomatoes are excellent on nachos but don’t cook them on the nachos. Throw some optop when serving! They will make the chip soggy fast. I have to make a big batch of nachos cause my family loves them. I do 3 layers. Everything on each layer. Bake in a preheated oven 425F for about 10minutes. We serve sour cream and salsa on the side. Once in a while will have some guacamole too.
I bake these in individual cast iron skillets so everyone gets to make/have their own nachos.

I can’t really give a recipe for this. Cause I’ve never used one. I go by taste.

But the main ingredients I use are. Lots of green & red Chilis, big chunk of ginger, lots of garlic, & lots of green onions small.
Cup soya
TBSP sesame oil
1/2CUPSugar
1/3CUP Rice vinegar ( this changes for me. I like to use sherry, or red or white wine vinegar also whatever I happen to have on hand)

Chop everything up nicely. I put sesame seeds in this batch but I don’t normally do that. I usually just add some to recipe when cooking.
You really can’t go wrong with ingredients. You will get to a great flavour with all this freshness. You’ll know if you need more sugar and or garlic or heat.
This last for a couple weeks in our fridge and I use 2-3TBSP for recipes either to cook with, marinate, or its excellent just as is, as a dipping sauce

I squeeze almost a whole lime in. If I don’t have lime, I use lemon.
This sauce is a big hit in our family everyone loves it.

We like spice. We eat a lot of spice. These can totally be done without the Chilis but we prefer everything.
Prawns
Inch long green onions
Sliced mushrooms
Thai Chilis with stem removed
These were done small, as an appetizer for Christmas Eve snacks.

Add everything in bowl, plus add some garlic & sesame seeds.
1TSP each Hoisin, brown sugar, oyster sauce, soya & sesame oil. Mix well. Refrigerate for a couple hours.

Grill with a little bit of Vegetable oil high heat couple minutes per side

Boneless skinless chicken thighs
Cut white onion & 1 inch green onion pieces
Garlic & Ginger
1TBSP oyster sauce
1/2TSP each salt & pepper
1/2TSP sugar
1/3CUP water
1TBSP cornstarch

Put some soya sauce over the meat and let marinate.
Make sauce in a small bowl. With oyster sauce, salt, pepper, water & sugar. Set aside.
Cook chicken, add onions, garlic, & ginger. Cook high heat couple minutes. Add sauce and thicken it with the cornstarch. Throw the green onions last couple minutes. This dish is yummy. Pretty simple. Minimal ingredients, and tastes great. We eat this with rice!
