We love these, again so versatile. Taste great with a variety of veggies and different meats. Today we were on the open road driving across Canada. With a fridge filled with leftovers, we always like to use them up. Had some left over kebabs, with chicken, pork, beef & onions on them done in a garlic ginger chili marinate. We thought they would be good in Banh Mi.

Crusty buns 4-5
Mayo
Pork pate
Left over kebabs mixed with Sriracha
1 julienned carrot
Half cucumber julienned
Half red onion sliced
Green onion sliced
1 jalapeno thinly sliced
Handful of cilantro & lettuce of your choice
TBSP or two of fresh minced Garlic

Everyone getting through this Pandemic ok? We hope so!
These bring back a lot of childhood memories from my favourite Chinese food restaurant at House of Lam in New Brunswick.
We love these, we wish pork ribs weren’t so expensive but they are. They are a treat in our family, we don’t make them often!
Package of pork spareribs we like to use the bite size packages but you can use the full rack of ribs as well. Cut and separate all ribs. We boil them with some salt for about 20 minutes.
1 large onion chopped, 1inch pieces
1 green or red pepper chopped, 1inch pieces
Lots of garlic
Lots of ginger
2-3TBSP soya sauce
1-2TBSP cane sugar
Lime juice, squeezed from half a lime
4-6 diced Thai Chilis
1TBSP vegetable oil
1-2 sliced jalapenos
Garnish with cut green onions, optional

Prep all your veggies. We just cut the garlic in half and we leave the ginger pretty large, we love ginger!

Chicken Taquitos

This is a chicken taquitos recipe. Oh so tasty! This is a must-try recipe. Looking for something new to make today?

The little snack we made last night, Tim wanted chicken, I wanted cheese and kids wanted nachos. This is what I came up with haha.
The Ingredients:
Cooked half a rotisserie chicken shredded
Flour or corn tortillas, we used 14
1CUP mozzarella
1CUP provolone
1/2CUP mascarpone cheese(this is what we used) or cream cheese
2TBSP each minced garlic, green onion & jalapeno/hot pepper
1TBSP cumin
2TBSP chili powder
Salt/pepper
I made glue with water & flour mixed together to seal the tortillas

Deep fry 375F couple minutes per side. Bottom, top & sides.
Finished taquitos
Lucky said they are ready! We serve these with sour cream and salsa.

4-5 cloves of garlic minced
Fried til meat is cook and vegetables are tender

One thing I can’t stand is soggy nachos!! They aren’t suppose to be soggy. If your using olives they have to be squeezed really well of their water. Tomatoes are excellent on nachos but don’t cook them on the nachos. Throw some optop when serving! They will make the chip soggy fast. I have to make a big batch of nachos cause my family loves them. I do 3 layers. Everything on each layer. Bake in a preheated oven 425F for about 10minutes. We serve sour cream and salsa on the side. Once in a while will have some guacamole too.
I bake these in individual cast iron skillets so everyone gets to make/have their own nachos.
