3 boneless, skinless chicken breasts cut into strips (can use thighs if you want as well) 1 green pepper sliced 1 red pepper sliced 1 jalapeno sliced half large Spanish onion sliced few garlic cloves sliced (we always use a lot of garlic in anything we make!) Can of Diced Tomatoes with spices Can of Tomato Paste 10 small flour tortillas roughly 2CUPS grated mozzarella 2TBSP of taco spice salt pepper to taste little oil of your choice for your pan
We like to get the pan nice and hot, add in olive oil, chicken and taco spice. Cook medium heat til chicken in partially cooked.
There will be some sauce, veggies left over (from what you took out with the chicken/veggies) I put this over top of everything. Then cover with cheese bake 400 til cheese is melted and under the broiler if you want.
When done, we then top with a handful of chopped cilantro. Serve with a side of sour cream if you like. Weather is getting nicer out. The kids and I enjoyed dinner Oceanside!
These little mini pizza bites, are full of garlic flavor, loaded with cheese and just taste great!! Roasted Garlic is so good!
Package of Mini Naan Bread (costco or Walmart sells these) Garlic 2cloves per piece 2 CUPS Grated Mozzarella & Cheddar mixed Pepperoni stick thinly sliced (optional) Crushed Chili’s (optional)
We like to put 2 cloves of garlic on each piece. Just smear the roasted garlic on each naan bread with a knife.
Who doesn’t like lots of cheese on their pizza?! So load that cheese on! Toppings here are endless, feel free to put what you want. We topped most with just crushed chili’s but did a couple with pepperoni on it as well.We used our cast iron pizza pan but you can use any baking pan you have available. Bake in a preheated 425 degrees oven for 5-8 minutes depending on your oven. Til cheese is starting to brown and they are nicely melted.

It’s been a long time since we posted on the site. Funny how life can change so quickly. We are glad to be back!! This is a favorite around here, the kids love twice baked potatoes.
3 large potatoes Butter Salt and Pepper thin slices of swiss 4-5 TBSP of grated mozzarella/aged cheddar half cup of sliced green onions sour cream(optional)
Place potatoes in oven directly on rack at 400degrees for roughly 45 minutes to an hour. Depending how large your potatoes are, will depend on how long they cook for. We like to stick them with a wooden kebab stick to check for doneness but a knife piercing them works too. Once fully cooked take a sharp knife and cut down centre, they are hot so be careful. We then leave them on counter for just a couple minutes to cool. We find this makes it much easier to work with the potato. Then take out all the potato, spoon works good for this. We lightly mash them with some butter, salt and pepper. I don’t find it needs milk. With the cheese that goes on top.
Careful fill all the potatoes back up with the mashed taters. Then we put a slice of Swiss, grated mozza and aged cheddar, then top it off with a couple of sliced green onions. Baked 400 degree til cheese it melted. You can also put under broiler for a minute for cheese to brown. I much prefer it this way but the kids do not.
Takes 4-5 minutes in oven. If you don’t like our choice of cheeses you use what you like and have on hand. Tastes great with lots of different kinds but this is our favorite.We served roasted carrots and spareribs with the potatoes. If you like sour cream can always serve a scoop of that with potato as well.
Lucky was more interested in the spareribs of course haha
We just love this pizza. We always have leftover chicken in the house. It’s a great way to do something different with it. Pizza Dough Bulls eye bbq sauce original flavor, we highly recommend using this brand but really any will do Left over cut up chicken Thinly sliced white or red onion, we like to use the red Thinly sliced green and red peppers 2-4 cloves of garlic minced, optional We do a little over 1CUP grated cheese per 12″pizza, we like to use mozzarellaIt was pizza night, we made a few pizzas. We love our cast iron oyster pan. Made 12 mini bbq chicken pizzas and one 12″ pizza. Also did a veggie and made an order of garlic fingers. Spread your pizza dough out in your desired pans. We use a spoon to spread the bbq sauce over the dough, then add your chicken, peppers, onions, and garlic if using. We then usually let this sit for about 15 minutes to rise a bit more, before adding the grated mozzarellaTop all pizza’s with mozzarellaWe also throw some crushed Chili’s on before baking, we love crushed Chili’s on our pizza.Bake 425F roughly 18minutes. Til cheese is nicely melted and golden brown. Let us know what you think. We make this a couple times a month.
We love pizza!! We can’t wait to have a pizza oven. Til then BBQ or oven will have to do. Had some tomatoes and jalapenos that needed used. Since the fridge needed cleaned out this week, thought it would be great to make veggie pizzas. One thing we love about pizza is you literally can put anything on them!
