Potatoes
Seafood Chowder
I like a full soup. I don’t want just broth, I want each bowl filled with seafood and vegetables.
I used
A package of clams
A package of small shrimp & scallops
14 black tiger shrimp
2 kinds of white fish cubed
Celery, carrots, onions, & potatoes
Can of corn
Garlic
Bay leaves, thyme, parsley, salt, & pepper
6-8CUPS chicken stock
1CUP half & half (if you like things rich, use cream)
1/2CUP flour
Lucky loves to supervise, he’s pretty good at it if I do say so myself.
Lucky always has to be right beside mom and dad!
Potato & Leek Soup
3 large leeks, cleaned very well, chopped
3 cloves garlic
4-6 large potatoes, peeled roughly chopped
8 cups chicken or vegetable broth
1 onion
2 bay leaves
3 sprigs fresh thyme or dried
1 teaspoon salt
1/4 teaspoon ground black pepper
1 cup half & half
Half cup grated cheese I used marble
Some cut green onions
I cook up the leeks, onions, garlic for a little bit.
We just love this soup!
Big Breakfast
Herbed hash browns! Cut potatoes, vegetable oil, garlic powder, onion powder, thyme, rosemary & parsley. I put everything in large ziplock bag and shake. Then you can either bake them if you like crispy ones or pan fry them in cast iron which is what I did. Once cooked I like to throw some cut green onions on them.
Using the same pan, cook up some back bacon, regular bacon, ham and or sausages. Til browned and cooked.
Same pan again. Eggs your way! Hubby and I like sunny side up, which is what we had this morning. Accompanied by a side of beans which was cooked over the open fire in our Alberta backyard. Serve with your favorite toast.
