Its a bit cold in Alberta today! Wanted to get a chowder going. Love homemade soups on a cold day! 2 carrots, diced 1 large onion, diced 3 celery stalks, diced 4-6 potatoes, diced Can of corn handful fresh parsley Salt/pepper Can of clams with juice 1/2LBS shrimp 6oz salmon cubed Can of fish or seafood stock 2TBSP butter 1TBSP Vegetable oil 2TBSP diced garlic 2TBSP flour 1/3CUP milk or cream
I like to use my Dutch Oven for Soup, Stews and Chowders. Get your pot on a med high heat. Add in your butter, oil, Onions, carrots, celery, garlic, salt & pepper. Stir cook for a few minutes. Then add in your potatoes, stir, cook couple more minutes.
Add in your fish stock, and enough water to cover veggies. Bring to a light boil and boil til vegetables are tender. I take the flour and mix it in the fish and shrimp Bowl. Add in all your seafood and parsley. Light boil for a bit longer. Til everything is all cooked.Add your milk/cream and corn just a few minutes before serving. Stir well. Add more salt pepper if needed!Seafood chowder always changes, as the seafood you use is never the same. Little homemade oyster crackers to go with our chowder today. Yummy. Wontons: Package of Wonton wrappers Half pound ground pork Half pound chopped raw shrimp 2-3green onions sliced 1-2TBSP diced ginger 1TBSP soya sauce 2TBSP cooking wine 1TBSP sesame oil Mix all together very well. Wonton Soup: 3CUPS stock or bouillon/water 3CUPS water 2TBSP each ginger and garlic (if you just want to flavour the soup leave pieces large to take out later. We enjoy eating it, I dice them up) 1TBSP white sugar, we used cane 2TBSP each soya sauce & chinese cooking wine 1TBSP sesame oil Put everything in a large pot and bring to a boil. Once boiling reduce heat, lightly boil till your ready for wontons.
I like to lay out a bunch of wrappers at once. I make a glue with flour/water. Put little bit in each corners. I place about 1TSP + filling in each. I don’t make mine fancy lol I just bring all my corners up together and smooch hehe
Once soup has been simmering for a bit. Add in your wontons, they will sink to the the bottom, I add in a small handful of cut green onions now too. Light boil about 10-15minutes. When they start to cook and be ready wontons will float to top. I sprinkle on more green onions when serving. We love soup, and this is one of our favorites!
Late night snack for hubby and I. Cast iron works in bed too right? HahaPrawns with Cajun spice. Pan fried with olive oil til cooked. I squeezed some lime juice on. Served with thinly sliced baguettes.
I like doing stirfrys. They cook up so fast and well they just taste just great! Were very lucky to not have fussy kids. My kids will eat everything! And they love stirfrys too.We normally always serve over rice but once in a while I do do noodles with them. How do you do your stirfrys? What do you like in them?
I like to look in the fridge and see what I have to use and what I could throw into this or that. I like to create new things and new dishes. I’m always combing 2 or 3 recipes to get what I like. Here we have Shrimp Scampi my way. I take the shrimp and mix it with salt, pepper, garlic, Cajun spice, & fresh parsley. I leave that sit for a bit. Heat some olive oil up in the pan and add the shrimps, cook. Boil pasta, & drain (saving (1/2cup water). Add pasta to shrimp pan. I add a little oil and some water from cooked pasta. Right before plating I stir in Arugula. Topped with some fresh Parm and served with a side of Arugula.
