I find its really hard to get chowders to taste the same. Especially when your using different seafoods each time. And I know for me. I never have the same stuff on hand. This one had a nice variety, we loved it!
I like a full soup. I don’t want just broth, I want each bowl filled with seafood and vegetables.
I used
A package of clams
A package of small shrimp & scallops
14 black tiger shrimp
2 kinds of white fish cubed
Celery, carrots, onions, & potatoes
Can of corn
Garlic
Bay leaves, thyme, parsley, salt, & pepper
6-8CUPS chicken stock
1CUP half & half (if you like things rich, use cream)
1/2CUP flour

Fry up the onions, garlic, carrots, celery, cut potatoes with some Vegetable oil and some of the salt pepper. I use the Dutch oven I’m making my soup in. Fry for a few minutes til onions start to soften. Add in the flour and mix well. Turn the heat up. Add your stock and all your herbs and salt pepper. Bring to boil, stirring frequently, light boil til Veggies are done. Will be nicely thickened.
We have the PC Choice brand but this one works just the same.

Start with a roux. Add your butter 1/2CUP and flour 1/3CUP and cooked til flour becomes a nice golden color.

Pour 2 cups of milk in whisking til thickened nicely. Add salt/pepper

Add your cheeses , variety is always best. about 4 cups of cheese. Mix, stir til melted in.

I stir in cooked macaroni. These makes so much, you can only eat so much mac N cheese. Although my kids and hubby love this. It’s great for school / work lunches. It’s nice to change things up a bit.
We will usually eat this on day 1 and on day 3 I’ll make a different dish to finish it off.

We love shrimp. We love Cajun! I actually didn’t have much shrimp left so I took 8prawns and cut them all up. Pan fried them with onions, peppers, jalapeno, garlic and a couple TBSP of Cajun spice. Once vegetables are tender add the shrimp vegetable mix to the noodles.

Simple, yet some tasty. A lot of people like to use panko. I do. But I prefer cornflakes.
3 bowls.
1. Flour, salt, pepper, Cayenne (if you like a bite)
2. Beat egg
3. Crushed cornflakes and coconut

Deep fry. I serve with Thai Chili Sauce.
