Chili Pepper Spareribs
These bring back a lot of childhood memories from my favourite Chinese food restaurant at House of Lam in New Brunswick.
We love these, we wish pork ribs weren’t so expensive but they are. They are a treat in our family, we don’t make them often!
Package of pork spareribs we like to use the bite size packages but you can use the full rack of ribs as well. Cut and separate all ribs. We boil them with some salt for about 20 minutes.
1 large onion chopped, 1inch pieces
1 green or red pepper chopped, 1inch pieces
Lots of garlic
Lots of ginger
2-3TBSP soya sauce
1-2TBSP cane sugar
Lime juice, squeezed from half a lime
4-6 diced Thai Chilis
1TBSP vegetable oil
1-2 sliced jalapenos
Garnish with cut green onions, optional

Ingredients combined in Bowl Blend until smooth
2TBSP soya sauce
2TBSP each fresh garlic & ginger
1TSP/TBSP Thai Chilis
All blended. Can have some small chunk but if you prefer you can blend til smooth.
Enough sauce for 18chicken legs, can reduce ingredients for less sauce

Garlic Chili sauce
Cup soya
TBSP sesame oil
1/2CUPSugar
1/3CUP Rice vinegar ( this changes for me. I like to use sherry, or red or white wine vinegar also whatever I happen to have on hand)
You really can’t go wrong with ingredients. You will get to a great flavour with all this freshness. You’ll know if you need more sugar and or garlic or heat.
This last for a couple weeks in our fridge and I use 2-3TBSP for recipes either to cook with, marinate, or its excellent just as is, as a dipping sauce
This sauce is a big hit in our family everyone loves it.

Inch long green onions
Sliced mushrooms
Thai Chilis with stem removed
These were done small, as an appetizer for Christmas Eve snacks.
1TSP each Hoisin, brown sugar, oyster sauce, soya & sesame oil. Mix well. Refrigerate for a couple hours.
