This is my take on one of my favorite childhood dishes from my favorite restaurant, House of Lam in Moncton, New Brunswick!

Pork ribs
Soya sauce
fresh ginger & garlic
Onion & Peppers
Thai chilis
Salt/pepper

I cook them a tad first with salt/pepper with big chunks of ginger and soya sauce. I then add the onions and garlic. Cook for a bit longer.

Then they go in oven at 450. Turning them frequently. I add peppers just before done. Maybe last 10 minutes in oven. Cook rib dish til nicely browned.
Dig in, these are awesome!

Pad thai Chicken & Noodles

5-6 boneless skinless chicken thighs (can use breasts) , sliced thin (this pack of chicken came spiced, I normally use just plain chicken)
Julienned carrots
Cut red peppers, broccoli, onions, garlic, ginger, inch long green onions, chilis, crushed peanuts. Rice noodle-meduim size.
You can use as much or as little of these ingredients as you want. Some like things more then others and some need to make a big meal and serve a lot.

Fry up the meat, add in everything but green onions. Also reserving some peanuts to sprinkle ontop. Fry everything on med high heat for 5-6 minutes.

2 1/2TBSP peanut butter
3TBSP lime juice
3 1/2TBSP tamari or soy sauce
1TSP red pepper flake or my homemade garlic chili sauce
1 1/2TBSP maple syrup 
I usually double this sauce. We like our sauce. Add it in, along with green onions. Mix and cook for a couple minutes. Boil some rice noodles and mix in!

This was a late night snack for hubby and I. We tend to go all out for our snacks cause it doesn’t happen often lol. I keep prawns skin/tail on. Coat in a chili lime spice

Little vegetable oil high heat. Soya and some cut up chilis. Couple minutes per side Snack done in under 10minutes

This is amazing! If you like Chilis & chocolate, your going to love this. I’ve made this 4 times. It last under 24 hours, the kids, the hubby love the spicy bite with this cookie.

How do you like your brownies? We like a variety. Id prefer not to eat a whole pan of the same thing. Try topping your next batch of brownies with the liking of your choice. These are some of our favorites.
Take your favorite brownie recipe and top with what you like.
We did coconut, chocolate chips, Thai chilis, cinnamon hearts, & some toasted sesame seed ones. The possibilities are really endless with what you can top these with. Almost everything tastes good with chocolate.
Top your brownies and bake.
